This weekend we went to BJ's Warehouse and I picked up The Complete Cooking Light Cookbook. http://www.cookinglight.com/bbs/biggrin.gif
I decided this afternoon (day off from work) that I was in the mood for baking and wanted to try a couple of recipes. Well, let me tell you the first one that I baked was Double Chocolate Chews and they are TOO DIE FOR! I figure that each cookie is one WW point. The recipe states 4 dozen but I only got 2 1/2 dozen. The other recipe is in the oven now....Cinnamon Crumb Cake and it smells wonderful! This recipe would be 5 WW points for one wedge. For those who don't have this cookbook, I would be happy to type out for you if you want.

Double-Chocolate Chews

INGREDIENTS FOR 48 SERVINGS:
1-3/4 cups all-purpose flour
2/3 cup sifted powdered sugar
1/3 cup unsweetened cocoa
2-1/4 teaspoons baking powder
1/8 teaspoon salt
1 cup semisweet chocolate mini-morsels, divided
3 tablespoons vegetable oil
1 cup firmly packed brown sugar
2-1/2 tablespoons light-colored corn syrup
1 tablespoon water
2-1/2 teaspoons vanilla extract
3 egg whites
Vegetable cooking spray
INSTRUCTIONS:
Preheat oven to 350 degrees.
Combine first 5 ingredients in a bowl; stir well, and set aside.
Combine 3/4 cup chocolate morsels and oil in a small saucepan; cook over low
heat until chocolate melts, stirring constantly. Pour the melted chocolate
mixture into a large bowl, and let cool 5 minutes. Add brown sugar, corn
syrup, water, vanilla extract, and egg whites to chocolate mixture; stir well.
Stir in flour mixture and remaining chocolate morsels.
Drop dough by level tablespoons 2 inches apart onto baking sheets coated with
cooking spray. Bake at 350 degrees for 8 minutes. Let cool 2 minutes or until
firm. Remove cookies from pans; let cool on wire racks. Yield: 4 dozen
(serving size: 1 cookie).

Cinnamon Crumb Cake

INGREDIENTS FOR 8 SERVINGS:
1-1/4 cups all-purpose flour
2/3 cup packed brown sugar
3/4 teaspoon ground cinnamon
1/8 teaspoon salt
1/4 cup chilled stick margarine or butter, cut into small pieces
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup low-fat buttermilk
1 teaspoon vanilla extract
1 large egg
Cooking spray
INSTRUCTIONS:
1. Preheat oven to 350 degrees.
2. Lightly spoon the flour into dry measuring cups, and level with a knife.
Combine the flour, brown sugar, cinnamon, and salt in a bowl, and cut in
margarine with a pastry blender or 2 knives until the mixture resembles coarse
meal. Reserve 1/2 cup flour mixture for topping, and set aside.
3. Combine remaining flour mixture, baking powder, and baking soda, and add
the buttermilk, vanilla, and egg. Beat at medium speed of a mixer until
blended. Spoon batter into an 8-inch round cake pan coated with cooking spray.
Sprinkle reserved 1/2 cup flour mixture over batter. Bake at 350 degrees for
30 minutes or until cake springs back when touched lightly in center. Cool on
a wire rack. Yield: 8 servings (serving size: 1 wedge).

Hi - thanks for the tips on these. I just got this cookbook, too and always am in need of satisfying my sweet tooth, so I'll go straight to these! Plus, thanks for putting in the WW points, saves me a step in calculating and lets me know I can definitely work these recipes into my daily points.

Thanks Grace for doing that! I love this cookbook but the only thing I wish it had was the year and month each recipe came from. Natasha....the great thing is that my brother is diabetic and can't have these...all the more for me and everyone else! Hehe http://www.cookinglight.com/bbs/smile.gif I am sure that he will cheat and try just one to make his little sister happy. Because this cookie is low in WW points I will individually freeze about a dozen and when I have a sweet tooth I can pull one from the freezer to satisfy me.

Mamasue The cinnamon crumb cake is great Actually all the crumb cakes of that issue are good and easy to make.

Jodyl....the cookbook cost $24.99 which was a great price considering that it carries a $35.95 price tag.

Oh, yes...the Cinnamon Crumb Cake was very good and a great recipe for breakfast or brunch. It has a nice light texture and also not that sweet. Going to run now and make a nice cup of decaf coffee to go with the crumb cake. http://www.cookinglight.com/bbs/smile.gif Bye..Bye
