A girlfriend is coming over Friday morning. I was thinking it might be fun to have a little brunch while we talk. Any suggestions for a very simple brunch?

Or..should I just do coffee cake or ??

I'll offer my standard brunch suggestion of quiche!

I don't know if it's simple enough but some variation on eggs benedict might be nice.

And maybe a bottle of sparkling wine w/ OJ on hand for mimosas?

A simple but beautiful fruit plate also?

If you're not wine drinkers, someone on this board posted this recipe for Chocolate Chai tea a while back; that would also be nice. I haven't tried it yet, but I still want to. I totally apologize to the original poster--I don't remember who posted it. I've got to start keeping track of who posts the recipes I copy/ paste into Word.

Chocolate Chai:

1 black tea bag, such as orange pekoe
1/2 cup boiling water
3tbsp sugar
2 tbsp unsweetened cocoa powder
2 cups milk
1 tsp. vanilla
1/2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
whipped cream
cinnamon sticks

In a small saucepan pour boiling water over tea bag. Cover and let stand 3 to 5 minutes. Remove tea bag. Stir the sugar and cocoa into the tea. Cook and stir over medium heat just until mixture comes to boiling. Stir in milk, vanilla, ground cinnamon, and nutmeg; heat through (do not boil). To serve, pour hot mixture into warm mugs. Top each serving with a spoonful of whipped cream and add a cinnamon stick as a stirrer. Makes 2 or 3 servings.

Granola/Yogurt/Berry Parfait. YUM. Light and delicious.

I'm a big fan of homemade muffins as well, and there are a TON of great recipes floating around.

These are really good:

Banana Walnut-Crumb Muffins

For the muffin batter
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 large ripe bananas -- mashed with a fork
3/4 cup sugar
1 large egg -- well beaten
1/3 cup butter -- melted

For the Crumb Top
1/3 cup packed brown sugar
1 tablespoon flour
1/4 teaspoon cinnamon
1 tablespoon cold butter
1/4 cup finely chopped, toasted walnuts

Set oven to 375 degrees. Lightly spray a 12 cup muffin pan with cooking spray.

In a large bowl, combine all dry muffin ingredients (except for the sugar). In another bowl, combine the bananas, sugar, egg and melted butter; mix well, stir into the dry ingredients, only until moistened. Fill the muffin cups 3/4 cup full.
Crumb Topping: Combine brown sugar, flour, cinnamon; cut into butter until crumbly, add in the nuts. Sprinkle over muffins.

Bake 18-20 minutes, or until muffins test done. Cool in pan 10 minutes before removing to a wire rack. Mine took exactly 18 mins.

Here's what I ended up making along with blueberry muffins. This used to be one of my all time favorite egg dishes and I haven't made it in a long time.

Eggs Continental

4 hard boiled eggs, sliced
3/4 c. soft fine bread crumbs
3 slices bacon, cooked crisp and drained
1/4 lb. mushrooms, sliced
1 c. sour cream
2 T. minced parsley or chives
salt
paprika
1/2 c. grated sharp cheddar

1. Spread the bread crumbs in a small, shallow casserole or 8" pie plate
2. Make a layer of egg slices over the crumbs
3. Saute' the mushrooms lightly in the bacon grease
4. Add the bacon, sour cream, parsley, and salt to taste
5. Spread this mixture over the eggs, top with cheese, sprinkle with paprika and bake 15-20 minutes in a 375 oven or til cheese is melted and sauce is bubbly.

Serves 4
