View Full Version : Succulent Salmon - thanks Cathie & Kim!

Hi,
We had a seafood smorgasbord this weekend what with the "Caesar-marinaded" fish and with Indian salmon (June 2000 CL) and broiled salmon with mustard-dill sauce (from http://www.epicurious.com). (Not all at the same meal though!) http://www.cookinglight.com/bbs/wink.gif I would recommend both salmon dishes.
CathieA, thanks for suggesting the salmon last week! I tend to eat only vegetarian Indian dishes, but the spices were wonderful with the salmon. (Didn't end up getting around to the Thai swordfish yet after all ...)
RunnerKim, thank you for pointing out that recipe! It was really good, too. I did make the sauce somewhat lower-fat and it turned out fine. I don't like dill so I also omitted it and we had chives, parsley, and basil on the side. It was terrific. BTW, I keep meaning to tell you - I love your username!! I'm a runner too.

Glad you liked it Natasha! I've found epicurious to be a great source for fish recipes. We just tried halibut for the first time and used a recipe from there that called for a quick fennel marinade. I was a bit nervous about it being too strong, but was fantastic! I'm really getting into eating fish (previously I didn't eat any) - its so healthy - just wish it weren't so pricey.

I'm a fairly new runner and chose the username as way of re-confirming my new self-image. Must be working as I just cut 2 minutes off my 5K PR.

Natasha- Glad you enjoyed the salmon. We make salmon so often, that I get a bit jaded about it and it was really exciting to find a recipe that made me LOVE salmon all over again.
RunnerKim- Try BBQ sauce on halibut. Unbelievable. We had it with a sweet-spicy BBQ sauce in Alaska and I couldn't believe how good it was. Not too many fish could stand up to BBQ sauce, so this is very unusual.

That is fantastic!! I hope you re enjoying it. It s an AWESOME sport though a lot of people think I m crazy for loving it. 2 minutes off your 5k PR is a real accomplishment too. Keep it up!!

CathieA - That s funny because for me it was kind of the opposite - I am much more jaded about Indian cuisine generally than about salmon dishes. When I first saw the recipe, I pretty much ignored it because Indian food doesn t excite me the way many other cuisines do. I guess I have just had a lot of it. But then you add a different twist and - bingo! - you have a whole new take on the cuisine.
