View Full Version : Brown Sugar-Peach Pie w/Coconut Streusel
Has anyone tried this pie in the July issue? I bought some peaches at a roadside stand and need to use some quickly. Any other good recipes using peaches? Thanks!

Whenever I have an excess of fresh peaches I always make a batch of peach muffins -- I use a good blueberry muffin recipe, but substitute peaches for the blueberries (obviously http://www.cookinglight.com/bbs/smile.gif ).
I haven't tried the CL pie recipe, but it does /look/ good! If you've got enough peaches to experiment, I'd give it a shot.

Here is a recipe for Peach Cobbler that I use ALL the time that came from Cook's Illustrated....it's FANTASTIC and really, really easy!
Batter Fruit Cobbler
2 Tblsp. unsalted Butter
3/4 cup all-purpose flour
3/4 cup plus 1 Tblsp. sugar
1 tsp. baking powder
1/4 tsp. salt
3/4 cup milk
2 cups peeled, sliced peaches
1. Adjust oven rack to lower-middle position and heat oven to 350ºF. Put butter in 8-inch square or 9-inch round pan, set in oven to melt.
2. Whisk flour, 3/4 cup sugar, baking powder and salt in small bowl. Add milk; whisk until just incorporated into dry ingredients. When butter has melted, remove pan from oven. Pour batter into pan, WITHOUT stirring it into butter, then arrange fruit over batter. Sprinkle with remaining tablespoon sugar. Bake until batter browns, about 40-50 minutes.
This is a tried and true!! Hope you like it if you decide to try it!

I love to make these breakfast rolls - they're so light. Original recipe called for strawberries, but almost everyone agrees that peach is better
Peach-Poppy Seed Rolls
½ cup water
1 large peach, peeled and chopped
2 tbl margarine or butter, softened
3 ¼ cup bread flour
2 tsp poppy seeds
1/2 cup sugar
1 ¼ tsp salt
1 ¾ tsp yeast
Glaze
1 tsp vanilla
1 tbl milk
1 cup powdered sugar
Place all ingredients except last three (vanilla, milk, powdered sugar) in bread machine. Make on dough cycle.
Remove from pan and let rest 5 minutes. Shape into 15 rolls on greased baking sheet. Let rise 30 - 40 minutes until doubled.
Bake at 375 for 12 – 15 minutes until just turning brown. Let cool. Mix vanilla, milk and powdered sugar and pour over top of the rolls to form a glaze.
(If you don't have a bread machine: Proof your yeast in 110-115 degree water for 5 minutes. Mix all the solid ingredients together in a large bowl. Form a well in the middle and add the liquid ingredients and proofed yeast. Mix until well blended. Add flour as needed to make a tacky dough. Knead for 8-10 minutes. Let rise until doubled in size 1 - 1 1/2 hours). Punch down and resume following the above recipe)

I made the Peach Pie last weekend. Very good, but way too juicy. It made the crust soggy right away. I checked the ratio of peaches to thickening against that of a peach pie I usually make that gets raves. It only calls for 5 cups of peaches with a quarter cup of flour. This has 8 cups of peaches with 3 tb flour. Right now I'm undecided as to whether to go with more flour, or go back to my old standby, instant tapioca, which thickens without getting pasty like too much flour sometimes does.
We are making this pie for Saturday night's Cooking Light supper club meeting. I'll give you feedback after our experiences then.

My CL Supper Club made this for dessert at our meeting this month and it was excellent. I don't recall it being too juicy as CarolC mentioned.
Whenever I have lots of fresh peaches I make peach ice cream. Yummy!!

Thanks, everyone for your input. Grace, that is a cobbler recipe that I have used for years. Did you ever try it with fresh blackberries? I think that is my favorite fruit with this cobbler recipe.

Pat, it's good with blackberries??!! I love blackberries and never thought to use them in that recipe. For some reason I always use peaches, but thank you so much for the tip, I will definitely try it next time I find blackberries on sale! That's why I love this board so much - so many new ideas! I was just looking through my newly made "recipes to try" folder (a folder I keep of all the stuff I print out off this board!), and I see that it is getting BIG and THICK - I don't know what I am going to do!!!! But thanks again...

Grace, I am having that problem also. My To Try Recipes cookbook is getting very full. I keep saying, "So many good recipes, so little time!"
Since I had several peaches, I tried the pie and the cobbler. We liked the peach pie the best. I would make the pie again. Today I am going to make peach ice cream.
My husband is blessed in that he can eat anything and never gain a pound. Don't you hate that? I make a dessert, eat a sample, and leave the rest to him. Do I get an award?
