View Full Version : Fettucine w/ Creamy Roasted Pepper Sauce

I like to watch Healthy Appetite with Ellie Krieger on FDTV. Last week she made this dish. So I just had to try it! We made it for dinner last night, talk about easy this was done in less then 15 minutes! I couldn't get enough of the flavor, I just kept on eating and eating it. You can add some grilled chicken to it to round it out.

Fettuccine with Creamy Red Pepper-Feta Sauce


2 tablespoons olive oil
1 small onion, chopped
2 to 3 garlic cloves, peeled and chopped
1 (16-ounce) jar roasted red peppers, drained and chopped
1/2 cup low-sodium chicken stock or vegetable stock
1 cup crumbled feta cheese or a 6-ounce block
1 pound whole-wheat fettuccine
Salt and freshly ground black pepper
2 tablespoons chopped fresh parsley leaves

Heat the oil in a heavy skillet over medium-high heat. Saute onion and garlic until soft, about 10 minutes. Add roasted peppers and saute until heated through. Remove from heat and let cool slightly. Place mixture in the bowl of a food processor with stock and all but 2 tablespoons of the feta. Process until combined and smooth, about 30 seconds. Cook pasta according to package directions. Drain, reserving 1/2 cup pasta water. Toss pasta with sauce, adding pasta water by the tablespoon, if needed. Sauce should cling nicely to pasta. Season with salt and pepper, to taste. Divide among pasta bowls. Sprinkle with parsley and remaining feta cheese.

Sure, I think that would be fine and actually a great idea to get dinner on the table in no time!

I agree it can be made before. Just make sure to save some of the pasta water when adding the sauce to the fettucine so its not too dry.

so this was good?? I was excited about trying it until I read the reviews on the foodtv.com website and then was scared off. maybe it will go back on the to-try list b/c it's so easy.

Thats odd I thought it at least got 4 stars? Maybe some thought it was missing something like meat?
Anywho I liked it alot:D Then again I just love roasted red bell pepper...

I made this last night - yummy! This will definitely be added to my keeper file.

I made some adjustments:
**I only had a 12 oz. jar of roasted peppers, so I reduced the cheese to 1/2 cup and chicken stock to 1/3 cup. There was still plenty of sauce to cover the pasta.
**I didn't have any fettuccine, so I used the equivalent measure of ear-shaped pasta (looks like shells and/or ears - sorry, the name escapes me at the moment!). I liked the way the shape of the pasta caught the sauce in its nooks and crannies.
**Last, I had half a b/s chicken breast (about 4 oz.) and a small zucchini in the fridge that needed to be used up, so I diced both with a bit of onion, stir fried it and added it to the pasta at the end. DH and DS don't think it's a meal if it doesn't contain MEAT, so this satisfied their appetites as well.

I would have SWORN there were more 2-star reviews b/c people thought it was just bland or needed something else but going back it seems everyone's loving it so it'll go on my menu next week. Thanks so much for bringing it back to my attention!
