I just found this recipe and was wondering if anyone has tried it? Yummy?? Thanks for the feedback!

I am not sure which recipe you have...but I did get one from a friend a year or so ago--I thought it was delicious and my husband deemed it "pretty good". I thought it was nice for summer.

Thanks for the feedback Kristi! Here's the recipe I was referring to....
Raspberry-Balsamic Chicken
1 teaspoon vegetable oil
1/2 cup chopped red onion
1 1/2 teaspoons minced fresh or 1/2 teaspoon dried thyme
1/2 teaspoon salt, divided 4 (4-ounce) skinned, boned chicken breast halves
1/3 cup seedless raspberry preserves
2 tablespoons balsamic vinegar
1/4 teaspoon black pepper
Heat oil in a large nonstick skillet over medium-high heat until hot. Add onion; sauté 5 minutes. Sprinkle thyme and 1/4 teaspoon salt over chicken. Add chicken to pan; sauté 6 minutes on each side or until done. Remove chicken from pan; keep warm. Reduce heat to medium. Add 1/4 teaspoon salt, preserves, vinegar, and pepper to pan, stirring constantly until preserves melt. Spoon sauce over chicken, and serve immediately. Yield: 4 servings (serving size: 1 chicken breast half and 2 tablespoons sauce). CALORIES 213 (11% from fat); FAT 2.6g (sat 0.6g, mono 0.7g, poly 0.9g); PROTEIN 26.5g; CARB 20.1g; FIBER 0.6g; CHOL 66mg; IRON 1.2mg; SODIUM 370mg; CALC 22mg

Thanks for mentioning this recipe - you just helped me decide what to have for dinner tonight. I've had it before and it's easy and yummy. And I get to use some of the fresh thyme from the garden!

This is a great recipe because it's easy to keep the pantry items on hand and you can make it very quickly. Oh yeah, and it's delicious! Try the sauce on boneless pork chops, too!

I would definately recommend this dish, it is one of our favorite dishes. I probably make it every week or two. I always double the sauce and serve it with egg noodles.
I have been unable to find seedless raspberry preserves...do you think it would be possible to make it using regular raspberry preserves and then strain the sauce before adding to chicken? Has anyone made this using regular preserves??

I agree! Great, easy recipe and I used preserves with seeds and thought they were fine.

I have also used Best Foods fat free Raspberry vinageret(sp?). I add some preserves to the vinageret and reduce until a thicker consitency. It makes a quick, great, fat free sauce! Also good with pork loin.
Great, thanks for your feedback! I wanted to make it tonight and didn't know if it would make a difference. I'm excited about trying this recipe, it's received such good reviews!

JJ40 -- Definitely go ahead with that seeded jam... I made this with regular jam (seeds do not bother me), and I didn't even bother with straining it. The recipe turned out delicious -- and frankly, I appreciated the look of the lovely little "speckles" in my sauce http://www.cookinglight.com/bbs/smile.gif
