Uses for carrot juice?

I bought a can of carrot juice hoping my toddler would be interested. No such luck. Any ideas on how to cook with it? I checked Epicurious and only found 2 recipes, and CL didn't find any. Veggie soup is the only thing that comes to my mind, and I'm not particularly interested in doing a soup. Thanks!

Would you drink a smoothie? (carrot juice is excellent in smoothies)

How about mixing it with another juice? Or drinking it as is?

You could certainly add it to a tomato sauce recipe or add it to mashed potatoes for a bit of color AND a nutritional boost...
