I LOVE oatmeal raisin cookies. I am looking for a low fat, low sugar recipe. Subsitutions (like applesauce) good. Artificials bad.
Anyone have any good tips. I don't care if they are thin and crunchy or fat and cake-y. I love them any way they come.

This version is delicious, and very moist!
No egg, No Fat Oatmeal Cookies
1/4 cup packed brown sugar
1/4 cup white sugar
3/4 cup applesauce
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup rolled oats
1/2 cup raisins
1/2 cup chopped walnuts (optional)
Preheat oven to 350 degrees Grease a cookie sheet.
In a medium bowl, stir together the brown sugar, white sugar, and applesauce. Sift together the flour, baking powder, salt, and cinnamon; stir into the applesauce mixture. Add the rolled oats, raisins and chopped nuts (if desired) and stir until combined.
Drop by rounded teaspoonfuls onto the prepared cookie sheet. Bake for 10 minutes in the preheated oven. Allow cookies to cool slightly before removing from the baking sheet.
Makes ~2 dozen

Thanks Lorelei, it looks great. Have you ever tried to substitute honey or molasses for the sugar?

I have never used honey, but in a few cookie recipes, I have substituted maple syrup for the sugar. It's very complimentary to oatmeal cookies.
For this recipe, substitute 1/3 cup maple syrup for the sugar. (Proportions for substituting maple syrup are 3/4 cup per 1 cup of sugar). You might also add 1/8 tsp of baking soda.
I've also had success with cutting the sugar called for in HALF -- you won't even notice the difference most of the time, especially in recipes calling for chocolate chips or raisins.
You might find these suggestions helpful:
SUGAR SUBSTITUTIONS
Replace 1 cup sugar with:
1 cup date sugar
1 cup Sucanat
1/2 to 3/4 cup maple syrup
1 3/4 cup rice syrup
3/4 cup barley malt syrup
1/2 cup raisin juice, soaked and blended
2 medium bananas
1/2 cup molasses
1/2 cup honey
1/2 cup apple juice concentrate
When replacing sugar in a recipe with a liquid sweetener, reduce the liquid content of the recipe by 1/4 cup. If the recipe contains no liquid other than the sweetener, increase the flour by 1/4 cup.
