View Full Version : Opinion on sub in recipe

I was checking out Eating Well, and thought about making this on Friday night - Warm Salmon Salad with Crispy Potatoes (http://www.eatingwell.com/recipes/salmon_salad_potato.html). I want to halve the recipe, but that's not my question. My question is, the recipe calls for 1 tablespoon buttermilk. I'm not sure if I want to buy a carton of buttermilk to just use 1 tablespoon. So, my options are:

1. Use skim milk
2. Use yogurt
3. Buck up and buy the buttermilk, and use the rest to make other recipes

I'm kind of leaning towards 3, but would still like opinions - would 1 or 2 also work?

Do you have lemon juice? Without seeing the recipe, yogurt would probably work but you could also use milk and with some lemon juice.

If you do decide to buy the buttermilk the remainder can be frozen. Divide it up into smaller containers or zip bags.

For a salad dressing, use yogourt. (Plain unflavoured of course.) Buying a box of buttermilk for one tablespoon. No. That's the kind of buttermilk thing that makes me irritable. (I mean, unless you feel like making buttermilk pancakes and a bunch of muffins over the next couple weeks. At least buttermilk keeps a long time.) Yogourt is really good in salad dressings.

ooop, missed that you posted it, was in a hurry to feed baby,:o but my advice still stands--i agree w/ compassrose, use yogurt.

Whatever you use, just so you don't screw it up, it's NOT a tablespoon, it's a quarter cup. There is one tablespoon of oil.

Sorry - was halving the recipe in my mind, and then halving that half to figure per portion.

whew--i figured i was crazy from being in a hurry to deal with baby and trying to skim recipe. :p glad to see i read it right and it is more than a tablespoon....
