View Full Version : Cinci Club - Entree for our 1st dinner!

Hello everyone!

After spending the morning going through my old magazines, I think I have finally decided on an entree for dinner at my house - the Chicken Creole recipe from Dec '97 (p 220). I don't have much experience cooking for large groups, so I was leaning towards something that could sit on the stove or in the oven until everyone is ready to eat. I have never made this, but it looks good. It is from Clarita Garcia's cookbook "Clarita's Cooking Lighter."

If any of you have made this, let me know. (Especially if it is bad!) I am having family in town this week, so I am going to use them as my guinnea pigs. If it flops, I'll let you know and I'll come up with something else.

Please give me any feedback you have on this idea (positive or negative!) or possible side dishes ideas. It suggests serving with rice, which I can easily make here, or if anyone would like to bring some that would be great. I think we can come up with some creative and tasty side dishes and appetizers to go along with it.

I will be out of town from Oct 28 - Nov 4, so I'll try to have everything set up (directions sent out, etc.) before then.

I look forward to seeing everyone Nov 8!

I haven't made this, but the recipe title sounds great. I guess it suggests a "Creole/Cajun" Theme. I haven't cooked much food of this type, but it will be a good reason for me to try! I'll be looking through my old CL issues and other healthy cookbooks for dishes that will go with this, and I'll let you know what I plan to bring. We'll all be anxious to hear how the Chicken Creole turns out for your family!
