Hello all.
Just a quick question regarding cupcakes:
I have had some successes with freezing certain types of (unfrosted) cupcakes. However, there are occasions when although freezing is not necessary, I would like to prolong the "shelf life" of a batch of cupcakes. Lately I have made several recipes in the form of "Texas Muffin" size cupcakes. My kids are older and one of these is a good dessert. We can't possibly eat 12 cupcakes in a day (well, maybe if you twist my arm), and storing them at room temp. doesn't always result in a fresh tasting cupcake the next day. Would it be wise to refrigerate them?
Occasionally, I am disappointed in the sogginess (sp?) of a cupcake that has been frozen and then thawed. Is there a secret to wrapping/refrigerating cupcakes?
This may seem like a silly question, but until you make Ina Garten's chocolate cupcakes, do not judge me---as far as I'm concerned, it wouldn't be a bad idea to empty my firesafe box and fill it with these AWESOME cupcakes!!

TIA

As with unfrosted cake layers, I wrap in plastic and then in foil (also don't include the paper liners when freezing). Refrigerating unfrosted cakes is a lot like refrigerating bread...a bad idea since it dries out in the fridge.
