PattyO - welcome and I'm glad you posted this review. I just noticed this one this morning and it appealed to me, but it did seem quite time-consuming! I think after reading your review that I will try it, and just make it on the weekend (it will probably take the WHOLE weekend) http://www.cookinglight.com/bbs/smile.gif and make another crust, use fresh potatoes somehow - why not? Hello all! I am new to the forum and I just got my first issue in the mail last week. I wanted to pass along my review of the carmelized, spinach feta pie. It took forever to make. My onions just would not carmelize. I think I had the temp too low but they said medium. Surprisingly it came out wonderful. I replaced the feta with mozzarella because of me and my husband's pickiness with cheese. We highly recommend it!

PattyO, sometimes if onions refuse to caramelize, I understand you can persuade them to do so with a light sprinkling of sugar. Myself, I sometimes toss a few drops of water into the pan; after the sizzle and steam die down, things do seem to start browning better. Or maybe you're right and it's the temperature. Keep us posted.
