I am pretty unmotivated...DH is returning from a 3 week OOT trip tomorrow, and it's been just me and the kids for a while now. I confess, we've had mac 'n cheese from the blue box the last two nights.:eek: No complaints from the kids, but still.....
So what are you cooking tonight? I need to cook some real food, but I need some inspiration. :o

Look at it this way at least the kids aren't going hungry;)
I have to decide between making lo mein from some left over bbq pork tenderloin or the Chicken fingers and parmessan fries posted on the CLBB tonight.
If he is returning home from a long trip why not make something a little special? Or how about some comfort food? Baked ziti w/ Salad? Roasted Chicken and potatoes?

Threw together the Spicy Chicken and Snow Peas from CL 05/07 last night. Doubled the sauce (I like sauce). Simple, tasty, and I'm hoping it makes good leftovers. It's going to be a crazy night at work (http://www.spc.noaa.gov)(till after midnight mostly likely) so I'm packing a double portion ;)

Made sesame noodles with chicken from CL last night and it was fantastic!! I added an extra tsp of sriracha sauce to add an extra kick. We'll be having leftovers from that tonight.

We have been eating out for the past few night yesterday was out 25th anniversary so it is time to get back to some healthy eating.

Well, it's DD1's 11th birthday, and our house rule is that the bday person picks the meal and others put up with it. So....
- Homemade baked beans
- Corn on the cob
- KFC Chicken :o (Oh well....her choice)
- Cake (again, not homemade; she wanted Weg's) and Edy's American Idol Ice Cream ;)

I am having leftovers tonight (pierogies and salad), but last night I made this recipe. Fast and easy although I must admit it makes 2, at max 3, servings for me!
Szechuan Green Beans with Ground Pork CL 4/06
1/2 pound lean ground pork
1 teaspoon cornstarch
1/8 teaspoon salt
1/8 teaspoon freshly ground white pepper
1 teaspoon peanut oil
2 1/2 cups (1-inch) cut green beans
1 teaspoon minced fresh garlic
2 tablespoons hoisin sauce
1 teaspoon sugar
1 teaspoon crushed red pepper
2 teaspoons low-sodium soy sauce
Combine the first 4 ingredients in a medium bowl. Heat oil in a large nonstick skillet over medium-high heat. Add pork mixture, beans, and garlic; cook 3 minutes or until pork loses its pink color, stirring to crumble. Combine hoisin and next 3 ingredients (through soy sauce) in a small bowl, stirring with a whisk. Add hoisin mixture to pan. Cook 2 minutes or until thoroughly heated, stirring frequently. Serve over rice.
I usually use 1-1 1/2 c green beans, ½ c mushrooms, and ½-1 c onions.

Most recipes I make are on my website. This is a recipe from my truly wicked stepmother (but it's very good!!!) It's not light, but I do use light sour cream, reduced fat cheese and fat free flour tortillas to make it a bit more manageable. It makes two 8x8 pans (or one 9x13) so I usually freeze one for later. My DH Is getting back tonight from a trip too. I made a few meals in the past couple days for my freezer meals make-ahead club and will give him the choice. We will either have Pork Ragout from CL over rigatoni with steamed broccoli. Or we will have the Roasted Chicken and Artichoke Calzones and CL Lomoney Orzo Salad (I had to make the salad for a luncheon today and there was some left). His chioce when he gets home - depending on how tired he is.

I'm having leftover Spaghetti Pepperoni Pie. It's so good! I used veggie pepperoni, ww spaghetti, and Parm-Reg cheese, and I cut it into 4 big wedges instead of 6. It looks cool because it holds together perfectly!

8 ounces spaghetti -- uncooked, broken into thirds
1/3 cup seasoned bread crumbs
2 cups pasta sauce
1 cup shredded lowfat mozzarella cheese
4 ounces sliced pepperoni -- chopped
4 large eggs
3 tablespoons grated parmesan cheese
In large saucepan of lightly salted boiling water, cook spaghetti 1 minute less than directed on package. Drain.
Heat oven to 350 degrees F. Coat a 10-inch nonstick skillet with nonstick cooking spray. If skillet handle is not ovenproof, wrap with aluminum foil. Coat with crumbs.
In bowl, combine spaghetti, pasta sauce, mozzarella, and pepperoni. Stir in beaten eggs. Spoon mixture into prepared skillet.
Bake for 30 minutes. Sprinkle with Parmesan. Bake until cheese is golden brown, 10 minutes. Let cool 10 minutes. Cut into 6 wedges.

We still have 40 pounds of ground beef in our freezer from the 1/4 cow that we purchased. :eek:
So...tonight, we are going to have either CI's beef tacos or CI's beef enchiladas.

I can't help you out tonight. Dh is at a work function, so the kids and I will likely have a Boboli pizza. It'll probably be cheese and pepperoni unless I add veggies to my portion.

That looks great! Thanks for posting it. We really like enchiladas, so I'll be trying this one soon.
As for tonight, I ended up making Singapore Noodle Curry Shrimp from allrecipes.com. We thought it was very good!

I was supposed to make CL's Citrus-Glazed Chicken Thighs but didn't get home in time to marinate them so I made CL's Spicy Honey-Brushed Chicken Thighs (on the grill) with grilled asparagus, roasted potato wedges and grilled pineapple. YUMMY!

We had the CL 07/04 Chipotle Macaroni and Cheese (made with whole wheat mac, added a can of diced green chiles, fat free cottage cheese - pureed smooth, and panko bread crumbs) and CL 04/98 Spinach-Strawberry Salad (little less dressing, no sesame seeds, only poppy seeds and sub'd walnuts for almonds). Tasty and easy!

Last night I made the Roasted Pork Tenderloin with Black-Eyed Pea Salad from Everyday Food. Though the original recipe uses a very basic paprika rub, I used a spicier Mexican rub made locally instead. The simple side salad of corn, black-eyed peas, red pepper and scallion had a bit too much dressing (though not fatty), so I added three stalks of chopped celery to fill it out and give it some crunch, as well as increasing the mustard to give it a bit more zing. The combination of the simple pork and the salad was surprisingly above average in appeal.
