I was on a hunt and found this for you. I was also thinking why couldn't you use CL Carrot Cake and substitute carrots for zucchini. http://www.cookinglight.com/bbs/smile.gif
Zucchini Coffee Cake
3 eggs
1 C. oil
1 C. sugar
2 C. flour
1 t. baking soda
1 1/2 t. baking powder
1 t. salt
3 t. cinnamon
1 t. vanilla
2 C. grated zucchini
1 C. nuts
TOPPING:
1/2 C. flour
1/2 C. brown sugar
1/4 C. nuts
1/2 stick margarine
Mix together eggs, oil and sugar. Add flour, baking soda, baking powder, salt and cinnamon. Mix in vanilla, zucchini and nuts. Pour batter into a 9x13 inch greased pan. Mix topping ingredients together and sprinkle over top of batter. Bake at 350° for 40 minutes.
