Am always looking for soy recipes and products. I would love to hear about your favorites; they've got to be terrific! Here are some of mine:
Boca Burgers - Chef Max's Favorite (on the grill)
Fresh Tomato Lasagna- CL Oct. 99 (FABULOUS)! Made with tofu - I'll never admit it to my family!
I also add the White Wave Baked Tofu (Italian)to my spaghetti sauce or (Mexican) to my bean chili. I look forward to some more recommendations on how to add this healthy food to our diets!

I, too, am trying to add as much soy to my diet as possible. I tried Boca Burger, but my personal preference for a good soy burger is LifeBurger by GardenBurger. I also stopped using cheese and use Veggie Slices, which are made from organic soy milk. The Veggie line also makes soy butter, parmesan cheese, etc. For sandwiches, sometimes I use the Light Life deli slices "bologna" or "roast turkey," they also have ham flavored and three pepper flavored slices. I just love Light Life tofu slices on Jewish rye with lots of lettuce, light mayo and sliced tomato. There are some great tofu recipes on a recent post. Where I live in the northeast we have frozen Italian products under the brand name "Celentano," and they've come out with vegan recipes including tofu that are an easy way to fix a quick lunch or dinner on the go. Scope out your supermarket, even though you live in Cattle Country the health benefits of tofu are really catching on. Good luck!

I cook a lot with tofu and enjoy convenience soy products also. Among the things I cook with tofu are lasagna and Thai and other Asian curries. I can, of course, post a couple if you're interested! I have also posted a recipe for Tofu Hummus that you might like on the Tofu Recipes thread.
About ready-made products: I like the Morningstar (?) Farms Chik Patties and the Fire-Roasted and Greek-Style GardenBurgers. (I don t like some of the other GardenBurgers, especially the Burger-Style ones.) I know some people don t like the Yves Veggie products, but I like the veggie and tofu dogs.

I agree with you on the Boca Burger Chef Max's Favorite, and I also like the Gardenburger Santa Fe flavor and LightLife sausage patties. But mostly, I like cooking my own tofu dishes.

Try soy nuts -- my husband loves them. I can get them roasted or flavored with Hickory Smoke or Barbecue, too, in my grocery store in NH. I add them to salads or just eat them as a snack. Yummy!
Also try tofu smoothies...easy to make, delicious... and adding smoked tofu to salads and chili. I'm a huge fan of tofu and eat it almost every day.
i have also been adding more soy to my diet and here are a couple of things i do.
1. we LOVE boca burgers (all flavors) and boca sausage links.
2. i use vanilla soy milk in my ceral every morning - i started by mixing it with half skim milk, but now i love it in my cereal by itself.
3. i snack on soy nuts or add them to salads.
4. i use soy milk to make smoothies
5. i have tried the veggie cheese slices and it is delicious

Mexican Zucchini with Tofu
Recipe By :John Paino & Lisa Messinger
Serving Size : 2
Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 tsp vegetable oil
2/3 onion -- diced
1 clove garlic -- minced
12 ozs tofu, extra firm -- crumbled
2 c zucchini -- chopped
6 Tbsps tomato sauce
3 tsps soy sauce
1 1/4 tsp chili powder
2/3 tsp basil
Saute onion and garlic in oil for 3 minutes. Add tofu and saute another 3 minutes. Add zucchini and saute 3 minutes longer. Add tomato sauce, soy sauce, chili powder, and basil; bring to a boil, then simmer for 3 minutes.

Stir-Fried Tofu Italian Style

Amount Measure Ingredient -- Preparation Method

2 tsp olive oil
1 clove garlic -- minced
1 tsp red pepper flakes
2 lb firm tofu -- cut in 1/2" cubes
3 tsps capers
10 Kalamata olives -- halved and pitted
10 cherry tomatoes -- halved
1/2 c dry white wine
3 tsps fresh lemon juice
3 tsps chopped fresh parsley
1/2 tsp salt
1/8 tsp black pepper
Heat the oil over medium heat. Add the garlic and red pepper flakes and saute 2 minutes. Add the tofu and saute for 2 minutes. Add the capers, olives, and tomatoes, and cook for 1 minute. Add the wine, lemon juice, parsley, salt, and pepper. Simmer for 1 minute and serve.

Bakmi Goreng (Indonesian Noodles)

3 Tbsps soy sauce
1 1/2 Tbsps brown sugar
1/4 tsp crushed red pepper
6 ozs udon noodles
1 1/2 tsps oil
2 cloves garlic -- minced
4 ozs bean sprouts
3 scallions -- sliced
1/2 tsp grated ginger root
4 ozs extra-firm tofu -- diced
1 Tbsp chopped peanuts
Whisk together soy sauce, brown sugar, and red pepper flakes and set aside. Cook noodles until al dente, about 6 to 8 minutes, and drain. While noodles are cooking, heat oil in a wok, add garlic, and saute over medium heat, stirring, for 2 to 3 minutes, or until lightly golden. Add bean sprouts, scallions, and ginger and stir-fry until sprouts are slightly wilted, about 3 to 4 minutes.
Add hot cooked noodles and tofu to the wok, along with 1-1/2 Tbsp of the sauce mixture. Stir-fry another 3 to 4 minutes, or until mixture is heated through. Drizzle with remaining sauce and garnish with peanuts.

I recently made White Bean-and-Tofu Stuffed Shells from CL's March 1997 issue. It was actually my first try at using tofu in a recipe (yes, I'm a novice with this stuff!). My husband and I both loved it - it tasted like cheese stuffed shells. Hubby doesn't tolerate cheese products too well, so he was happy to try this one.

Here are some substitutions which might be helpful to you.
You won't notice a difference in most recipes -- and sometimes the difference is a very pleasant surprise. For instance, I've started using 1/2 soy flour/ 1/2 wheat flour in my pizza crust at home -- and the crust tastes delicious and gets wonderfully brown and crispy! ;P
1 cup milk = 1 cup fortified soy milk
1 cup fruit yogurt = 1 cup soft silken tofu + fruit of your choice, blended
1 egg = 1 tablespoon soy flour + 1 tablespoon water
1 egg = 1 - 2" square of tofu
Soy milk = 1 cup full fat soy flour + 3 cups water
1 cup ricotta cheese = 1 cup firm tofu, mashed
2 tablespoons flour = 1 tablespoon soy flour
Replace 1/4 of the flour in self-rising baked goods with soy flour (this substitution ratio will yield almost no difference in flavor -- adding a bit more soy will change the consistency slightly)
