I have heard good things about Dish (http://www.eatdrinkdish.com) and was excited to try it. It's upstairs from a wonderful wine and cheese shop which recently was name one of America's best new boutique wine shops and is co-owned with chef Jenna Johansen. When I confirmed my reservation Jenna actually took the info and I told her we were celebrating birthdays (we were, just a bit late).
The service was a wonderful combination of sophisticated yet personal and casual. The views were spectacular and the meal was a 2 hour 45 minuteevent. We chose the 7 dish tasting menu but specified that we wanted to try the salmon on the menu (which changes every day based on what is fresh). All of the dishes in the restaurant are "small plates". Throughout the meal the chef checked in with us, sometimes serving our dishes, making sure we were happy with everything. This was possibly my best meal, ever!
Our first course was "The original" which consisted of shaved serrano ham and manchego cheese which you wrapped together and dipped in a bit of sherry. Mmmm, a perfect start to the meal. Served along side was a carrot, ginger, sage soup that had such a wonderful bite of ginger!

I forgot to take a picture of the second course which was fresh yellow corn off the cob, lightly sauteed with garlic, scallions and a local english pea coulis.
The third course was eggplant and portabella mushrooms, grilled fresh, napoleon style, fresh chevre and basil pesto. I normally don't like the texture of eggplant but loved this!

Next was the requested salmon. Bella coola king salmon, wild, tartare, english cucumber, red onion, lemon aioli and avocado. Perfect!

We were hoping for the next dish but hadn't requested it. Buffalo carpaccio, all natural, king canyon ranch, garlic crostini, capers, horseradish dill crema.

Finally, dessert. We were served a dish of tiramisu with birthday candles (but thankfully no singing!). I don't generally like tiramisu because it's usually soggy but this was incredible!

We also were served a dish of local brandied cherries, served over shortbread with a black pepper whipped cream that was out of this world good. I forgot to take a picture!
If you're ever in the Vail area, this is a must do restaurant!!!! :D
