View Full Version : Carolina Pulled Pork Sandwiches

I have made these sandwiches for years and we love them! I'm posting them for a completely selfish reason as I sometimes misplace recipes, but usually my favorites are posted here so I can always look them up. This one I've referred to a number of times (I know because I've reviewed every post this morning!), but today when I was looking for it (because I lost my hard copy!) I found that I had never posted. After an extensive search online I found it.

I'm posting so hopefully others will enjoy it, but also so I will be able to find it when I lose it next time!!! :D


Carolina Pulled Pork Sandwich

1/4 cup butter
1 1/2 onion, chopped
3 cloves garlic, chopped (I think I used more...)
1 Tbs powdered mustard (I've also used a "squirt" of dijon when I was out of dry.)
1 Tbs Paprika
1 Tbs ground cumin
1 tsp cayenne
2 cups catsup
1/4 cup packed dark brown sugar
1/4 cup apple cider vinegar (too much for us.... I use between 1-2 Tbs)
2 cups water
1 tsp salt
1/2 tsp ground black pepper
1 Tbs vegi oil
1 whole 5 lb. Boston pork butt
12 soft hamburger buns

Melt the butter in a saucepan. Add onion and garlic; cook until softened, 5 minutes. Add mustard, paprika, cumin and cayenne; cook 1 minute. Add catsup, sugar, vinegar and water. Simmer, covered, 30 minutes. Uncover; simmer 30 minutes more. Add salt and pepper. This can be made up to 2 days ahead, then refrigerate, covered. Before using simmer 3 minutes.

Preheat oven to 350 degrees. Heat oil in large ovenproop dutch oven; add pork. Brown.

Bake, uncovered for 30 minutes. Pour 1 cup of bbq sauce over pork. Cover pot. Lower heat to 250 degrees. Bake 3 - 3 1/2 hours, basting meat occasionally until a thermometer inserted in the middle of the roast registers 170 degrees.

Let cool slightly. Trim off excess fat. Pull meat apart using 2 forks. mix pulled meat with remaining bbq sauce in large bowl.

Serve with soft buns.

Note: I put my pork in the crock pot covered with water and seasoned with dried onions the evening before and it is done in the morning!

I just read your recipe for pulled pork sandwich....Then at the end you had a note that you put your pork in the crock pot covered with water and seasoned with dried onions the evening before....could you explain for me when you mix the sauce and put it on the pork.....(you don't cook it with any of the sauce??) I have a 8 lb pork shoulder and this recipe looked good to me to make for July 4th..... Maybe I'm just misunderstanding the water and crockpot part

I was wondering the same thing! I'm always looking for more crockpot recipes, so I would probably prefer to make it that way (less "babysitting" than having something in the oven.

Sorry for the late response!

What I meant was that in place of using the oven, I simply put the roast in the crock pot with some water (I add a little dried onions just because it smells better...). I put it in when I go to bed, and in the morning it's done! Then I proceed as usual and just shred it and mix it with the sauce.

I didn't get my timing right this time, so I'm actually doing it in the oven for the 1st time in years. It smells good though!

Thanks for the response.........I did make the pulled pork in the crockpot for the 4th. It went over great......I had a 8lb bone in shoulder roast. Put it in the crockpot along with sliced onion on the bottom and top along with alittle garlic powder, dry rub and 1 1/2 cup of apple juice, 2 tablespoons cider vingar, on low for 10-12 hrs. Took it out of the pot and let it cool so I could handle it....Deboned (fell off the bone) took the fat off it. Shredded it, mixed bbq sauce in it,(not to much) put meat back into the crookpot to heat it back up and then keeped it warm.....Served the extra sauce on the side. Everyone loved it.......I also but out Baby Ray BBQ Honey Sauce , Cole Slaw and rolls..............

thanks for sharing the recipe. this is going in the to-try pile since we just got a crockpot for a bridal shower gift. 3 1/2 more months 'til we can use it! i'm trying to gather some good recipes & my fiancé loves carolina BBQ (even if he is a yankee).

Well... I did my first roast in the oven and I SO overcooked it that I couldn't even salvage it. Luckily I had purchased an extra to freeze (Costco!) and I did that on in the crock pot early in the morning. That one turned out good as usual, much easier to shred (mine fell apart too.). I'm glad you enjoyed it!
