I hate to ask such a silly question, what is is taragon ? Is it a spice, or a vegetable ?

A leafy herb. Sold fresh (with the fresh herbs in the Produce section) or dried in bottled jars in grocery store Spice sections.

Welcome to the BB where no question is considered silly (in regards to food that is ;) ).

Tarragon also has a slight licorice flavor.

CL had a recipe for Tarragon Turkey Burgers a few years ago. They were delicious and the tarragon flavor is not strong--this might be a good intro to the herb. I am not a big licorice or fennel fan but I do like tarragon.

Don't ever be afraid to ask questions even if you think they're silly. I've asked what I thought were silly questions more than once and I've learned from them. I haven't had anyone laugh at me yet (or at least not to my face).:D Mine usually have to do with "technology".

Tarragon is a wonderful spice. I just love the flavor of it.

Just to clarify, tarragon is an herb, not a spice.

Since I started making Missindi's Creamy Mushroom Soup, Tarragon has become one of my favorite favorite herbs!!

I agree that there are no silly questions.
Tarragon is one of my very favorite herbs. I won a seond grand prize at state fair using tarragon as the accent:


State Fair Chicken on Rice Bed

1 stick butter
1 T parsley
1 t. tarragon
1/2 t. salt
Pepper
1 1/2 lbs. sliced mushrooms
1/2 cup dry white wine
1 1/2 cup chicken stock
1 cup uncooked rice
2 eggs
1/4 cup milk
1/4 cup parsley
6 slices Prosciutto
6 slices Mozzarella cheese
Olive oil
6 chicken breasts, boned

Melt butter and add parsley, tarragon, salt and pepper.
Cook for 5 min. and add mushrooms, cooking for 10 min.
Add wine and cook over high heat until reduced to glaze.
Add stock and simmer for 15 min.
Cook rice according to directions.
Combine rice, butter, eggs, milk and parsley, mixing well.
Spread in well-buttered square baking dish.
Bake at 350 for 10 min.
Remove from oven.
Divide square mentally into six rectangles.
Place on each a piece of prosciutto toped with slice of Mozzarella.
Heat olive oil in large skillet.
Pound chicken until flat and trim into squares.
Dust chicken with flour seasoned with paprika and garlic powder.
Brown in oil.
Transfer chicken to mushroom sauce and simmer for 10 min.
Please each breast on top of Mozzarella square and cover with mushroom sauce.
Bake in oven 10 min. more until cheese is melted.
Cut into 6 serving portions.

Note: if you can tell there is a lot of fat in this recipe. This is from the 70s before Cooking Light and heart healthy recipes for all of us. I posted the original but know you folks know how to modify as you wish.
