I'm having a few friends over for a casual dinner this week. I'm thinking of making Tarragon-Cream Chicken and Polenta Potpies for the Sept. issue of the RR magazine. What kind of salad and/or dressing would be good with this? I only have a few standard dressing recipes and none of them seem right, so any suggestions are appreciated. TIA!

What if you made a light vinaigrette out of champagne vinegar, oil, fresh OJ and tarragon, to complement the tarragon in the pot pie and just put it over Bibb lettuce?

Will you please post a review of this recipe? I have the magazine and I have dog-eared that page.

I think a hazelnut vinaigrette might complement it. But then, I'm on another hazelnut vinaigrette kick.

I like the idea of the orange vinaigrette, sounds really complementary and refreshing (but then, I love orange vinaigrette...!). Add some spinach leaves to your greens also, they pair nicely with oranges!

Oh, and would please come back and let us know how the pot pies turned out??? I got the magazine at the store the other day and am planning on making this recipe over next weekend, so a review would be fun! The recipe sounds yummy and I like the idea of the polenta topping with it!

like the others have said, something with a light viniagrette... maybe lemon... and a salad with shaved fennel. i think those flavors would cut thru the richness of the cream pot pie.

Thanks for the replies. I, too, was thinking of something citrusy. Too bad I used my favorite lemon vinaigrette on this same group back in March! I think I'll go with something in the orange category.

I'll definitely come back with a review. I hope they turn out as yummy as they "mentally" taste!
