View Full Version : dairy free alternative to Parmesan?

Hi!
I want to make this risotto from Alton Brown but it asks for 2 ounces of grated parmesan (1/2 cup)--it might be ok without it--but does anyone know an alternative I can use to this? Any ideas would be great!!!

Vegan resources can be very helpful to you since vegans don't consume dairy.

This might sound strange, but I often make my risotto without parmesan (and don't miss it). So you could also try that.

I use just plain nutritional yeast. But you can also make a parmesan sub that is very good by processing nutritional yeast with lightly toasted sesame seeds. It helps give it a better mouth feel. But we use nutritional yeast on everything, we keep it in a shaker bottle and my boys call it sprinkles.
