cooking schools/lessons

I am interested in planning a fall vacation somewhere in the US, and would like to incorporate several days of cooking lessons. I have been unsuccessful locating any places that offer cooking lessons other than degree offering institutions. Any ideas or great experiences? Thanks for your help!!!
