View Full Version : Going Out On A Limb With Two Chickens...

Hello all.
In the midst of all the crock-pot talk, I have mine out on the counter. After a quick trip to the market and a counter full of groceries, I discovered that both of the small, roaster chickens I purchased will actually fit side-by-side in the crock pot (and I'm no dummy---I could literally kill --or cook--two birds with one pot). So, my question to the seasoned crock-pot professionals, is
now, what do I do with them? How long to cook (these are two small chickens about 3lbs each--I'm guessing). Do I need to add a lot of liquid?
I vaguely remember someone posting about lining the pot with foil, should I do that?
Any help would be appreciated. If I could just get two properly cooked (translation: not cardboard--but instead moist, tender chicken) chickens, I would be a happy camper.

TIA,
Mishquilt

The simple Sticky Chicken is probably the board favorite for this. As for doing two, I have no idea. I've done it when my kitchen was burned out in a fire (because for the most part I loathe crockpot food), so the best I can tell you about getting it right, texture wise, is to do it when you're around and check it. Every crockpot is different, and no one can really know how yours does it the way you like it.

Sticky Chicken

3-4 t. salt
2 t. paprika
1 t. cayenne pepper
1 t. onion powder
1 t. thyme
1 t. white pepper (I use black pepper)
1/2 t. garlic powder
1 large roasting chicken
1 C. chopped onion or 1 small onion chopped

In a small bowl, thoroughly combine all the spices. Remove the giblets and any gravy packet from chicken. Clean the cavity well with paper towels. Rub the spice mix into the chicken, both inside and out, making sure it is evenly distributed and down deep into the skin. Put 4-5 crumpled aluminum foil balls in the bottom of the crockpot and then put the chicken on top of the foil balls in the crockpot. Do not add any liquid to the pot. Cook on medium (or high) one hour, then low for about 8 hours.

Note: depending on the size of your chicken -- 4 teaspoons of salt may be a bit too much.

I'm a pushover for an easy recipe!

Thanks for taking the time.
