Hi- Just wanted to say thanks to all of you for your great advice. Friday was my birthday and I got the ice cream freezer you all recommended and I love it! I also made the Huckleberry Coffeecake (5 Star Cookbook)for Saturday morning that several of you recommended and it is excellent! Furthermore, my husband took me to an outdoor concert that night, so I got to prepare a picnic and used many of your suggestions from the picnic threads. It was great to have all your input and get to put it to use. I love this board. Thanks again!
PS-any good lowfat icecream suggestions would be appreciated if you have some.

Anna, here's a link to great ice cream website - The Ice Cream Parlor. I found this link a while back on another food site -www.dsuper.net/~zaz/icecream/frame.html. You can find almost any recipe, and they have topping recipes, as well as sorbets, frozen yogurt, sherbet and granita recipes too! As far as lowfat, you can substitute fat free half-n-half or evaporated skim milk for part or all of the cream. I did this with the strawberry ice cream recipe and it turned out great. Just be aware that it is best right after you make it. Once it has frozen hard, you can tell the difference; it will be more like ice milk. Let us know how it turns out for you if you try a recipe..... http://www.cookinglight.com/bbs/smile.gif

Happy birthday, Anna! Glad you had such a good time. What kind of ice cream maker did you get? I've been thinking about getting one. Thanks!

Happy Birthday to you Anna! Take care, http://www.cookinglight.com/bbs/smile.gif Zinnia
Thanks for the birthday cheer! It was really fun to have a birthday that I got to put so much good advice from you all to use! BarbaraL, I got the Cuisinart ice cream freezer as per the suggestion of several people on this board. My sister got it for me from Chef's catalog and therefore got the extra work bowl free which was a real plus. All of this info was passed on to me on this board. Thanks for the ice cream website, Shelly, I'll look it up today because I really need to make my creations light!

Happy birthday, Anna.
Here is a recipe I make a lot for coffee ice cream. I have included the changes that I have made to make it lighter
1 cup milk (I use skim)
1/4 c instant coffee (I use decaf)
1 c sugar
3 lg eggs, beaten (I use egg subst. for 2 of the eggs)
1/8 tsp salt
1 tbs. vanilla extract
3 c half and half ( I use fat free)
Heat milk in a saucepan over m high heat. When bubbles the edges of the pan, remove from heat. Stir in coffee and half the sugar. In steady stream whisk hot mixture into bowl with beaten eggs, whisking constantly (otherwise you will get scrambled eggs and I don't know about scrambled egg ice cream!). Return to saucepan. Add remaining sugar and salt. Stir constantly over high heat 3-4 minutes until mixture is thickened. Stir in vanilla and 1 cup half and half and chill in fridge. Strain through a very fine sieve and pour remaining half and half in mixture.Freeze in ice cream maker 20-30 minutes.
