Last night we had our first official supper club gathering of the Kansas City Cooking Light Supper Club. It was great fun! We made recipes from the Jan./Feb. issue and had a fabulous meal. The Tropical Fruit Salad and Chicken with Spinach and Sundried Tomatoes were my favorites. We decided on the pasta that it could use a little salt and that another type of pasta, like penne, might work better. We're gearing up for an
Asian themed dinner next month!

Thanks for sharing! Sounds like your group is off to a great start. Our group had a Chinese theme in January, and some of the dishes were really great, so I'm sure you'll enjoy your asian theme.

And BeckyM, did you post a review of your supper club's Chinese themed dinner? (Maybe I missed it if you did...) I'm so interested in living vicariously through all of you...thanks for taking the time to post your reports!

Our next meeting is on Feb 21st. I'll be sure and give a full report on the menu!

I did post a list of the items from our Chinese-themed dinner, but I didn't really review them. If you do a search on this Supper Club Exchange, you can find it under my name with the title "Thoughts & Ideas from Cincinnati Supper Club".

As a mini-review, the Cinnamon Beef Noodles were very flavorful, though more like a soup than we expected. Everything was good (no flops), but the items I particularly remember enjoying were the Oriental Salad, the Pineapple Fried Rice, and the Five-Spice Tea Cake (not from CL, but still a low-fat recipe).

Our next dinner is February 28th, and the hostess picked a theme of "The Letter C". So we're supposed to bring dishes that start with the letter C. I'm bringing Carrot Cake with Cream Cheese frosting. I can't wait to see what others think of. It should be fun!
