Our supper club met Saturday night and had a Mexican Theme Dinner. I posted complete reviews on all of the recipes on the main bulletin board, but wanted to post our menu here also to try to keep this board going!!
Here was our menu:
Appetizer: Layered Chili, Cheese and Roasted Corn Dip (Mar '01)
Palate Cleanser - Tequila-Lime Sorbet (Sept '00)
Salad - Mexican Black Bean and Citrus Salad (Complete CL Cookbook)
Main Dish #1 - Chicken with Mole Sauce (Complete CL Cookbook)
Main Dish #2 - Mama Totota's Tamales (Dec '00) served with Smoked Tomato and Tomatillo Salsa (Oct '99)
Side Dishes - Mexican Rice and Sopapillas (non-CL recipes)
Dessert - Orange Scented Flan with Roasted Pineapple (Mar '98)
Drinks - Albuquerque & Strawberry Margaritas, wine, and homemade Chili Pepper Beer
