We had our Supper Club meeting for March last night. A great time was had by all. Our menu was not a theme, but just recipes from the March issue.
For the appetizer we had the Sun-dried Tomato Dip, with homemade baguettes. This one was outstanding. I gave it a 10, as did most everyone else.
Black Bean Salad - this too, was very good, except the red onion was a little overpowering (we picked a little bit out). I'd make this one again, just use less red onion. The dressing was delicious.
Dinner was Pan Seared Chicken with Artichokes. Also excellent. Kelli, who made it, also said it was very easy and very fast to make. I gave it an 8.
Spinach-Feta Stuffed Shells. This one had gotten a not-so-good review on the Good Food Board, but I wanted to make it anyway. They were EXCELLENT!! I loved them. I did use about 1/2 cup more cottage cheese than the recipe called for, and I used Trader Joe's Tomato Basil Marinara. Outstanding. I'd definitely make these again. I had never used tomato basil feta cheese before. It was delicious. Everyone loved these.
Roasted Sweet Potatoes - these were a big hit. Not very sweet at all, which is what everyone liked about it. We're all used to those overly sweet dishes, but this one had cumin, parsley, and red pepper for a little zip. Excellent.
Dessert was the Gingerbread cake with Blueberry Sauce. This too, was a hit. I had made this before with the crystallized ginger, but last night it was made without the crystallized ginger and I liked it better without. The blueberries on top were great. Delicious.
We were batting a thousand last night - every recipe was a keeper. And we realized we are becoming really good friends based on the topics of conversation at the dinner table!
As usual, I can't wait for next month! No theme again, we're just choosing recipes from the April issue.
