Well, we had our Cinco de Mayo party tonight (a little late, but none of US cared!)
We had TONS of appetizers. There was salsa, pico, queso, bean salad, and a mixture of cream cheese and homemade pepper jelly (Beth you are a wonder!)
Dinner was chicken or beef fajitas with peppers and onions, homemade refried beans (YUM!), great rice and fixins (including guacamole http://www.cookinglight.com/bbs/smile.gif) (did I forget anything?)
For dessert we had Margarita Cheesecake posted from someone on the BB....I think it was from CL at some point, but Im not sure when.
Of course there was Mexican beer (Dos Equis, Corona, Negra Modelo) and Margaritas.
We are fairly new and adding new members still, so we are having fun with old friends and making new ones!
