Well, it was that time again. We got together Thursday night for our Supper Club. As usual, it was great. For those that don't know, we try to keep each meeting's menu limited to the recipes from that month's issue. So most of these recipes are from the June issue. We had:
Tomato-Mango Salad with Orange Curry Dressing - this was unexpectedly good. Light, sweet, refreshing and will be a great way to use up those summer tomatoes. We gave this a 7.
Mini Spanakopitas - Everyone loved these. A definite keeper. I could have eaten the whole batch just by myself! Light, crispy, savory, delish. Ratings for these ranged from 8-9.
Spicy Cucumber Salad with Peanuts (or whatever the actual name is, I forgot!) - Also fantastic. The zip/heat from the red pepper flakes was a terrific twist on a typical cucumber salad. Ratings ranged between 8 and 10.
Buttercrunch Corn Pie - This was also good. It had lots of flavor and was filling. The salsa could have used some more kick, but I personally liked it just as it was. This got ratings from 8-9.
Cuban Coconut Rice Pudding - (This one's from the May issue) I reviewed this already on the other board, and I think it's awesome, but everyone else didn't love it as much as I do. They all thought it was good, but nothing to do the "happy dance" over. It got ratings from 7 to 9 (I gave it a 10). I guess you have to be a rice pudding fan in the first place.
Creamy Chocolate Amaretto Cheesecake - I also reviewed this one on the other board. This got universally good reviews. Our one member who doesn't like cheesecake at all gave it a 9. Very creamy and rich, and the amaretto flavor is just right - not too overpowering.
We were missing one member this month, who is off on vacation for the months of June AND July (boo hoo - she'll be missing next month's meeting too). So there were only five of us, but we managed to laugh and conversation turned from our usual topic of "bodily functions" to body PARTS! I never know how we manage to get onto these topics.....(hee hee).
Well, the menu is already planned for next month, I'm looking forward to it, as always!
