View Full Version : fresh/dried seasoning substitutions
When a recipe calls for using fresh seasonings,ie: cilantro and I can't find any in the market, I substitute dried instead. However, I'm not sure whether to increase or decrease the amount of the dried seasoning, and by how much. Can anyone help me with this dilema?

I think dried seasonings should be either a quarter or a third of the fresh version. Of course, a lot depends on how fresh the dried seasonings are, too! Boy, am I a help, huh? http://www.cookinglight.com/bbs/rolleyes.gif

Yes, dried amounts are usually about 1/3 the fresh.
