It's such a wonderful feeling to enter the front door after a hard days work and smell the crockpot cooking.

I'd love to have your recommendations on some light recipes for the crockpot.

This recipe is from my Rival Crock-Pot Cookbook, and is under "Dieters Fare". I have made it before & it is good; other than it making 6 servings at 120 calories per serving, I don't know any other nutritional info. Hope this helps! http://www.cookinglight.com/bbs/smile.gif Zinnia

*Chicken Cacciatore

3 whole chicken breasts, skinned & halved
1 t. salt (omit if you want)
Dash pepper
1 T. dried onion flakes
1 green pepper, seeded & finely chopped
1 clove garlic, finely chopped
1 can (15oz.) whole tomatoes, mashed
1 can (4oz.) sliced mushrooms, drained
2 t. tomato paste
1 bay leaf
1/4 t. thyme
2 T. finely chopped pimento

Wash chicken pieces well & pat dry. Combine
remaining ingredients in Crock-Pot. Add chicken pieces, pushing down into liquid to thoroughly moisten & coat. Cover & cook on low setting for 7-9 hours. Serve over rice,
your fave pasta, or egg noodles.

There was a feature on crockpot recipes in CL - was it last fall? I know a lot of folks rave about some of those - one that sounded good to me was a thai pork stew. If you have CL, search the back issues or maybe someone will post a few.

I make chop suey in the crock pot. It turns out really good every time!

Crock Pot Chop Suey

1 package pork chop suey pieces
1 can chicken broth
1 can chop suey vegetables
1 package chop suey seasoning

Brown pork pieces in a hot pan coated with cooking spray. Place meat in crock pot, and add one can chicken broth (broth should just cover meat--add a little water if you need to). Cook on low 8 hours. Turn crock pot to high. Drain and add chop suey vegetables. Stir in chop suey seasoning. Cook for half an hour on high. If you like the sauce to be a little thicker, add a small amount of cold water and cornstarch mixed together. Serve over rice.

Yeah, darn the loss of the thread on the old board. I also love my crock pot. Although I don't work anymore, I find that, with kids, it is easier to cook in the am than the "bewitching hour" of 4-7pm, so the crock pot is still essential.

Some favs from CL have been Thai Pork Stew, Jenny's Slow Cooker Meatballs, Rioja Chicken. There was a good article a while back in CL with more recipes, too. That is where the Pork dish came from.

There is a recipe in the Complete CL cookbook for a pork roast with garlic. I made this, put it in the crock pot surrounded by carrots, onion, and potatoes, with a small amount of water. By the time we got home from church, it was ready. Tasted wonderful too.

Know what you mean about the "greeting" you get from dinner that's just waiting to be served after a long day. In preparation for the crazy days of school, sports, scouts, etc. (can it almost be that time of year?) I bought two crockery cookbooks at Borders. Haven't used them yet, but they both focus on healthy/low fat crockery cooking. Skimming through, they both look like they have some very tasty recipes, including soups, main courses and even desserts.

The book titles/authors are: "Smart Crockery Cooking" by Carol Heding Munson, Sterling Publishing Co., Inc. New York, Published 1996 and "Healthy Crockery Cookery" by Mable Hoffman, published by The Berkley Publishing Group, 1998.

Once I get around to using them, will try to remember to post some results. I decided I just couldn't face (and neither can my hips) any more fast food/pizza on the run nights this coming year! There is never enough time to cook a "real" dinner unless I wait until we get home. By then I just want to drop into bed!

I don't get very creative with my crockpot. But I do love to do a whole chicken with veggies which must be pretty lowfat because I don't add any fat at to it and I remove the skin when serving (since it doesn;t get crisped up in the crockpot). I just slice a couple of potatoes into big round slices or chunks and put those on the bottom. I throw in a generous handful of baby carrots. Then I slice an onion into several large round slices and put those on top. Season the veggies with salt and pepper. Put the whole chicken on top. Season with salt, pepper, herbs, whatever you want. I squeeze a lemon half over it and the put the leomon half inside the chicken and throw the other half in the pot face down so it can season the veggies a bit. Then pour about a half cup of liquid over it. I like to use white wine, but water or chicken broth can be used. When done, the chicken just falls off the bone and the veggies are so soft and delicious. This is one of the easiest and most comforting meals I make.

This may have been self-evident to anyone who owns a crockpot. But just in case anyone has not prepared a chicken this simply and deliciously, I wanted to share.

1 large onion, thinly sliced
1 1/2 pounds skinless, boneless chicken breasts
2 6-ounce cans of tomato paste
8 ounces fresh sliced mushrooms
1/2 teaspoon salt
1/4 teaspoon pepper
2 cloves garlic, minced
1 teaspoon oregano
1/2 teaspoon basil
1 bay leaf
1/4 cup dry white wine
1/4 cup water

Put sliced onion in bottom of Crock-Pot. Add chicken pieces. Stir together tomato paste, mushrooms, salt, pepper, garlic, herbs, white wine and water. Spread over chicken. Cover, cook on low 7-9 hours or high 3-4 hours. Serve chicken pieces over hot spaghetti or vermicelli. 4 servings and completely yummie http://www.cookinglight.com/bbs/smile.gif

1 pound Great Northern Beans, soaked
1 medium onion, chopped
3 cloves garlic, minced
2 4-ounce cans green chilies
2 teaspoons ground cumin
1 teaspoon oregano
1 1/2 teaspoons cayenne pepper
1/2 teaspoon salt
2 pounds boneless, skinless, chicken breasts
1 14 1/2 ounce can reduced-sodium chicken broth
1 cup water

Put beans in medium pan and cover with water. Bring to a boil; reduce heat and allow to simmer for 20 minutes. Discard water. Cut chicken into 1-inch pieces and brown if desired. Put all ingredients in Crockpot. Stir to mix. Cover and cook on low 10-12 hours or high 5-6 hours.
3 g of fat per serving
45 g of protein
46 g of carbs
