It was a rushed night for us as we were volunteering for a neihborhood block party. So I made the Ham and Swiss Loaded Potatoes from April '00 and had a broccoli/tomato salad to go with it. Took along to the block party some carrot cupcakes.

Tonight we're having the Italian meatloaf everyone has been talking about along with a spinach salad and cornbread (have some buttermilk to finish off!).

I made the Lasagna with Tomato Sauce and Basil from the July issue of Cooking Light. It was wonderful and I highly recommend it.

We had the Honey Pecan Crusted Chicken Breasts from '97 with a squash medley, mashed potatoes, and Grace's coleslaw.

Grace, this is the first time I had tried your recipe and we liked it very much.

We had the Mocha Fudge Pie for dessert.

We tried the Peanutty Noodles. They were great, as everyone reported. I added twice the amount of chili sauce, to make them spicier. When doing it again, I would add more peppers and carrots (I added less carrots based on some previous postings, but thought more would have been okay) and less snow peas. I like snow peas, but then are somewhat of a pain to eat.

As a side, I wilted some fresh spinach in minced garlic and sesame oil. It went well with it.

Last night followed a long day at work, so I had the leftover Lemon Dill Couscous from the night before, and my husband had a personal size DiGorno Pizza. Not the ideal mealtime, I guess, but it worked!

Great Post idea!!!

Last night we had the Penne-Zucchini pasta and it was delicious. I used both oregano and marjoram and Gemelli instead of Penne.

Tonight we are having the meatloaf from the Aug 2000 CL. I will try to cut my sundried tomatoes prior to using them. What is a good side with this? I was thinking about roasting potatoe wedges and also having a side fo fresh asparagus.

Beth, that spinach side with the peanutty noodles sounds great.

Last night we had Gail's artichoke dip, salsa, gazpacho, enchiladas, potato salad with blue cheese, chipotle marinated pork tenderloins, brownies and purple passion sorbet.

Well, last night was a non-cook night (DH at hospital all night) so I just had some campbell's tomato soup and a grilled cheese sandwich. Night before last was great though. Had the Italian Meatloaf which is definitely a keeper (sans sundried tomatoes in the future) with mashed potatoes and steamed brocoli.

Tonight's menu is the Filet Mignon with Mushroom Wine sauce (found that darned beef consomme finally) with a side of Green Bean Saute (from the menu suggestions at back of CL) and some dinner rolls. I am really looking forward to tonight!

Well, I am embarrassed to say that we grilled some hot dogs last night and had it with frozen french fries! It was a quick and easy dinner since I haven't been to the grocery store... http://www.cookinglight.com/bbs/redface.gif

MrsReber and I were on the same wavelength last night as we had Kielbase (Lite variety) and fresh green beans. I cooked the beans till just tender and then sauted them with the keilbase in olive oil with garlic and onions as was discussed in a previous topic. They were delicious! Tonight we're having Blackened Chicken and Salad with fresh corn on the cob.

Last night my husband wasn't home, so I made a BLT (or was it really a BT since I forgot to buy lettuce???) using our first garden tomato of the season. Unfortunately the tomato was a bit mealy (can that be from picking it too soon as I was so impatient???), but it still tasted better than a store-bought tomato. I also found out that I really prefer BLT's on white toast rather than the whole wheat bread that we always use to be healthy.

Tonight it's the Spaghetti Pie that everyone was giving rave reviews about! I'm going to add mushrooms and a potpourri of herbs from the garden. Can't wait...

We had the Filet Mignon w/mushroom wine sauce. I could just make the sauce and eat it! We have been having this WAY too often lately--so easy and delicious but filet mignon gets expensive. This is my new "favorite dinner". I served it with homemade parmesan baked fries and steamed zucchini. Tonight my husband is not home for dinner and it was supposed to be Chicken Saute w/mushroom and leeks (hard to believe a woman who HATED mushrooms would eat them two days in a row) but I may cop out and make a pizza. My favorite comfort food.

last night we had left overs from the night before - the indonisian honey-corriander chicken (mmm!) along with a stew made with wax beans and some fresh hanover tomatoes from virginia cooked in some chicken broth thickened with cornstarch.

tonight i think the cheddar asparagus pot pie is on the menu.

I was a cheater last night, too. We had a picnic this weekend and had leftover hot dogs. We made Chicago-style hotdogs (bright green relish, mustard, pickle spear, pickled cayennes, onions, tomatoes, all sprinkled with celery salt). Mmmm - so good. My husband and I saw a one hour show on PBS on hot dogs two weeks ago which really gave us a craving for hot dogs. I've had more hot dogs in the past two weeks than I have in the past two years! Had baked beans and corn on the cob to round it out, followed by leftover chocolate cake. Not cooking light, but real good.

Once again, I'm a kindred spirit with Mrs. Reber(we like the same music, evidently!) and JodiL. Husband wasn't home, so daughter and I went shopping. We had BLTs for a late dinner along with corn-on-the-cob (I went to the farmers' market before coming home,and didn't want to waste it). But the other night, I made the penne with roasted vegetables from the June issue. Daughter wouldn't eat it, but husband and I liked it. Next time I think I'd half the recipe; I've been eating it for lunch too, and still have some left over.

Geez, at least you all cooked at home. Didn't anybody eat out? I worked late and hubby had a haircut appointment at the mall so we just met there and had a fast-food dinner. I had chicken teriyaki with steamed rice so I feel a little bit virtuous.

So many good dinners.

Our neighbor just has a baby (her 5th!)and it was my night to cook dinner for her family. That was the gift from the neighborhood women. So I made them 3 different homemade pizzas and popped one in the oven for us also as I delivered them. The bread machine was busy last night!

How is everyone else doing with their preparation? Anyone else out there forget a main ingredient?? I am alone in my cooking shame.

Christine - it'll be fine. You can always serve it with chopped basil and other herbs on the side if you want. Meatloaf is so flavorful (and so is provolone). Let us know how it turns out!

Natasha! I'm in the Pacific time zone and still a couple hours from even starting mine. I'll have to keep that basil in mind though - my DH has offered to make dinner tonight (if I get the tomatoes soaking) and he often forgets to go outside and snip the basil.

Last night I was at mom and dad's for dinner, so I got some of mom's yummy cooking. She made her wonderful Chicken-Corn soup, Morning Star farms veggie burgers and dessert was Peach Custard Pie.

Tonight was a bowl of cereal because I wasn't very hungry.

:0 Last night I taught back-to-back Weight Watchers. Because I had new members and am very pokey and then because my receptionist is a SAINT, we stayed even later so that someone could sign up as a new member and then the new members could make some purchases, I didn't get out of my meeting until 9 P.M., so THEN the mall was closed and I couldn't get the goat-cheese mixed green salad I had been planning so, SO IN DESPERATION and BECAUSE I DESERVE IT DARN IT- I had a totally calorie-laden, but totally delicious Poblano Chicken/Rice wrap from a local Mexican restaurant. Sigh. Tonight when I get home I am making the Singapore Shrimp over Spinach which I think if from July 2000.

Last night at about 10:30 pm when we finally got around to dinner (I'm married to the musician, remember? We have a horrible schedule), we had warmed honey-roasted turkey breast on toasted bread with mozzerella and cheddar cheese, mustard, black pepper, fresh spinach and a drizzle of honey.
For unhealthy sides: an assortment plate (a.k.a we couldn't make up our minds) with small portions of Ranch Chips, Pretzels and potatoes wedges (a.k.a. Starch, starch, starch)

Beverage selection:a tall glass of milk.

Then we both passed out cold on the couch!!!!

Last night, I had beans (cooked ahead with onion and garlic) flavored with chipotle and jalapeno peppers, oregano, cumin, minced celery and bell pepper, and a touch of cocoa; also one of Indian Harvest's rice/grain combos (long-grain and red rices and rye); collard greens steamed with garlic; and roasted zucchini and mushrooms.

Tonight I had Indian-spiced red lentil dal and basmati rice; a big salad; and steamed okra.

Tomorrow I'll be home a little early, so I'm thinking of doing a reprise of the Garden Vegetable Stir-Fry with Tofu.

Dinner so far tonight has been a tray of raspberries (about 1 pint), a larger tray of strawberries (which are threatening to ooze red juice on the computer), a plum, and probably a bowl of cereal when (if?!) Omigod! I made the Filet Mignon tonight and it was fantastic!! Truly delicious. I will definitely be repeating this one. It is a bit pricey for our budget, but I'm sure I'll pull out this recipe for any celebrations, etc., that come up! I guess I could even consider tonight a celebration - I got a letter this afternoon from my law school informing me I made dean's list last semester http://www.cookinglight.com/bbs/biggrin.gif

Laura - I felt that way too when I was in school! Don t worry, though - there are some GREAT law careers out there, including some that challenge you without being your whole life. I love what I do. I m sure you ll find something you really like as well.

Last night I made the vidalia onion risotto w/ feta, and am now enjoying the leftovers. If I ever get home from work at a decent hour, I bought the ingredients for the summer vegetable stew from last month's issue. Has anyone tried it yet? The picture looked pretty good, so we'll see....

We had Alaskan halibut marinated in lemon juice and Montreal Steak Seasoning overnight then grilled,baked potatoes, and grilled zucchini and yellow squash. It was really good until I accidentally got a bite of fish skin. Ewwww! Shudder, shudder. That was the end. I was forced to eat a big bowl of ice cream (with hot fudge and toasted pecans) to get rid of the fishy-ickies.

I suppose it's only fair that I start...

I was originally going to make portabella mushroom burgers last night, but decided against it at the last minute.

I ended up making Roasted Cauliflower Alfredo w/ Carmelized Onions, and wasn't disappointed with my decision at all! http://www.cookinglight.com/bbs/smile.gif

Last night I made the Greek chicken casserole from Aug. I also served one of the tomatoes I got from the farmer's market with some basil from my garden and a little bit of balsamic vinegar. The casserole was good, but very watery for some reason.

I'll share mine, although some of you have seen it already. It was a hectic night, alot of running around, so I cooked up a Hillshire Farms turkey kielbasa. I fried it in my cast iron pan (no oil or anything). We also had some corn on the cob that I had picked up at a local farm market on my way home last week and some frozen green beans. I buy the frozen beans with almonds. They're quite good. Tonight, more running around! I will start my pizza dough in the bread machine when I get home. That way, after I run my errand, the dough will be ready and I can cook my pizza!

Yes, Lorilei, this is a great topic- we can all share our weeknight meal ideas!

That's funny- I'm a Susan, too. Looks like the three Susans have spoken!

Great idea! Last night we had cheese tortellini with homemade tomato sauce and steamed green beans. Tonight it's cheese and bean enchiladas. Yum!

LoriLei, that Alfredo recipe sounds really tasty!! Would you mind posting? I love carmelized onions!!

We had the chicken with the orzo and heavy cream from that heavy cream issue. It was bland, but definitely not offensive!
Laura,I just finished (this summer) my MLS degree (library science) and feel sort of sad. I'll miss all the friends I made. It's always sad to finish something good!

Of course it's easy and light! I take a gallon size ziploc bag and put sliced potatos in it (w/skin) add Pam cooking spray (no WW points!) pepper, kosher salt, garlic, a sprinkle of dried basil, chives--fresh or dried. Then add 1/4 cup grated parmesan cheese. Shake until well coated and I cook them on my pizza stone (lightly sprayed with Pam)at 425 until brown and crispy.

I am so sorry Kathy! I drove all around Red Bank, but nobody seemed to know where you lived. I did meet some interesting characters who tried to steal the pizza, so I had to go home. There were 2 slices of pizza left and I brought one today for lunch. It was very good- we had onions, red and green pepper, lots of fresh basil, artichoke hearts, fresh garlic, mozzerella, some of my left over sharp provolone, rictotta, and romano to top it off. Very delicious and the crust was nice and crispy.

Tonight is marinated pork tenderloin, probably with broccoli and mashed potatoes (or corn, or stuffing, or biscuits- haven't decided yet).

Sunbrie, I tried the chicken and orzo recently and found it pretty bland too. I don't know if I did something wrong...a lot of people seemed to be raving about it! I'm hesitant to try it again because it was just okay.

You guys are going to convince me to buy a bread machine! I've held off -- I love fresh bread and I'm afraid I'll eat way too much (hello, Weight Watchers). Plus, ordering a pizza is one way I get a rare night off from cooking. But your homemade pizzas sound great (and I recently acquired a cooking/pizza stone).

This topic has given me some great ideas! Last night, my husband was out of town so I made pasta salad with my 2 yr. old and 4 mth old. I let my oldest choose the ingredients and amazingly it was good. Penne with grilled chicken, cherry tomatoes, broccoli, olives and mozzarella cheese.

I'll be eating the leftovers tonight.

Go for the bread machine!!! You won't regret it! Once you make your own home made pizza and see how much fun it is to create, you won't want to order pizza out anymore! I have a pizza stone too. You'll love it!

I posted a note about homemade pizza before. We buy a lowfat pepperoni and make our own sausage so that we can eat a lot less fat when we want meat on pizza. I use lean ground turkey and Penzy's Italian Sausage Seasoning. I let it sit in the fridge for a few hours, then cook it in crumbles, drain and freeze so it's ready in a flash. Makes a much lower fat pizza.

BTW, I don't remember what I had that night. Last night was cup of soup and half a sandwich at Jason's Deli, and tonight was leftover night. No peanutty noodles though.

I broke down and bought pizza dough today from the local Italian shop..baby steps here! I will see how much my kids like homemade pizza before I buy the machine. Plus, to be honest, I am a bit concerned about where I would keep the sucker! I have far too many gadgets as it is! Boy oh boy do I feel for you. Literally. I did the same thing last September and the day before leaving for Hawaii last week, I practically did a repeat performance, fortunately only spraining it this time! (Great start to vacation, eh?) May I suggest if you have a tall stool, make great use of it. I spent my first weeks perched on a stool, chopping veggies then sitting down; cooking food, then sitting down. What a bummer. If it had to happen, I hope you didn't break the right ankle like I did-- I couldn't take my kid to school for weeks!

Karen, I can't believe I found this!

Not Really Chicken Ranch

Serving Size: 8

1 to 1 1/2 pounds cooked chicken---shredded or diced
1 10 oz can dice tomatoes with green chilis--plus extra if needed
1 10 3/4 oz can 99% fat free can cream of mushroom soup, condensed
1 15 oz can black beans
1 15 oz can whole kernel corn--drained
1/2 to 1 package chicken taco seasoning
10 corn tortillas-torn in 1" pieces
1/2 cup cheese-grated

Add all ingredients but cheese; mix. Mixture should be thick but still soupy. If too thick, add more tomatoes. Top with grated cheese.

Bake 45-60 minutes; until hot and bubbly.

Microwaving mixed canned goods until hot, then adding chicken, taco seasoning and tortillas before pouring into pan with cheese will cut baking time in half.

Kathy,I higly recommend a bread machine, if only to make dough. There is a timer function on it, so I could even put the ingredients in in the morning and have dough ready when I come home! Sorry, don't mean to be cruel about the pizza! It was yummy. Last time, I put too much stuff on it and everything slid off when we tried to eat it! But it really is so fun to create different kinds of pizzas! With the bread machine making the dough, all I have to do is add the toppings and bake it for 15 minutes. That's a very easy dinner.

We had egg wraps last night and tonight--I have decided to take the night off--we are ordering pizza, of course! and I already made one myself this week! You ladies sure make Weight Watchers hard!!!!

Last night I made a garbonzo bean salad from a long-ago CL recipe (cumin, coriander, tomatoes, carrots, etc.), and then had some cantaloupe and fresh apricot as dessert.

Phoebe, I saw where you mentioned something about red rice. I bought some at the store the other day, but it doesn't say anything about how to cook it. Should I do anything special?

Last night was pre-marinated pork tenderloin. Nice a moist, but way too salty! Fake potatoes since my potatoes went bad on me (gross) and broccoli. I consoled myself after my mediocre meal by making the khalua-cinnamon brownies. It seemed to help since dinner was not as good as I had hoped. We still have some of the lemon swirl cheesecake from last Saturday, too. I think my husband is going to bring some to work for the guys. I told him he has to eat it so I can bake more stuff! He loved the brownies, too. I highly recommend them. They are awesome.

Don't know what tonight will be as I am feeling a bit under the weather, but I will count my blessings- at least my ankle isn't broken! That must be really awful! Hope it heals quickly!

Mrs. R, do you have any suggestions for good local seafood? A friend of mine is visiting and thinks she is on vacation! Now I feel pressure to find fresh seafood worthy of "Vacation" Any suggestions? I am thinking of Red's Lobster Pot in Point Pleasant.

Last night I made Basil Shrimp with Feta and Orzo from the March 2000 issue. We love it. This was the third time I made it. We also had tossed salad and whole wheat rolls. Peach custard pie for dessert.

Connie, I'm embarrassed to admit that I've never cooked red rice by itself, but I imagine it would take the same 2:1 ratio of water-to-rice as other rice, and would cook about as long as brown rice. What I've been using is one of the rice blends from Indian Harvest that includes the red rice along with long-grain white rice and rye. In fact, I think Indian Harvest recommends mixing the red rice with other rices. But I'm not sure. http://www.cookinglight.com/bbs/redface.gif

Anyway, the blend from Indian Harvest cooks in 25 minutes after the water comes to a boil. So try the red rice that long first, and keep testing. Then let us know. http://www.cookinglight.com/bbs/wink.gif

Ah, Last night I had Ravioli with homemade Vodka sauce. Not very exciting, since my husband works nights, I eat by myself a great deal, but I enjoyed it none the less....

Thanks for the info. I'll test the red rice by itself sometime this coming week and let you know. I also quickly went to the web site you recommended - it looks good. I'll spend more time there later! It's off now to watch Iron Chef with my husband while I look at recipes.
