i made the vidalia risotto the other night, and because there is only one of me i have A LOT leftover. would it be ok to freeze??

I have never froze rissotto. Because it should be eaten right away to enjoy its creamy consistancy. Now I have reheated it and added a bit of broth to recreate a bit of the creaminess and it has worked ok.
