(((Canice!))) My best friend's boyfriend is acting like a twit right now. No one would believe the story. He is just so childish at 38! Anyways, she lives in San Francisco. You 2 could meet for dinner and vent ;).

Maybe the full moon had something to do with all of this!!! :)

I've said it before and I'll say it before, this board is incredible.

Yes, it is boyfriend troubles and by his decree it is over. I don't feel like going into his excuses here but they are excuses and he's either been lying to me all along or he's lying to me and possibly himself now. Either way, it's over.

Thank you to everyone who has supported me here and those who have sent notes. I'll get back to you if I haven't yet but I have biscuits in the oven that I don't want to burn. ;) :D

Canice, I hope that you will get through your troubles, your relationship has been so much longer than mine, I can only imagine how tough this must be for you. Especially with recent happenings in your life. I wish we were together so we could share a bowl of soup and a pumpkin ale. (((Canice)))

I'm very sorry to hear about all the heartache that seems to be going around. I'd send you both some of that soup (squash soup, in Canice's case!) and pumpkin ale if I could. (On that note, I recently tried a pumpkin ale and thought of you guys!)

Barley Risotto with Caramelized Leeks and Mushrooms

2 tablespoons olive oil
8 ounces sliced cremini mushrooms -- sometimes sold as "baby portobellos," "portobellinis," or "brown buttons"
3 cups chopped leek -- about 3 regular or 1 large leek to reach 3 cups; see Notes
1 cup uncooked pearl barley
1/2 teaspoon salt -- see Notes
1/4 teaspoon freshly ground black pepper
3 1/4 cups chicken broth, low-sodium/no-fat
2 tablespoons chopped fresh flat-leaf parsley

Heat the oil in a large saucepan over medium heat. Add leek; cook 20
minutes or until tender and golden, stirring occasionally.

Add mushrooms; cook 5 minutes or until tender, stirring occasionally. Add
barley, salt, and pepper; cook 1 minute, stirring constantly. Add broth;
bring to a boil. Cover, reduce heat, and simmer 30 minutes, stirring
occasionally.

Uncover and cook 5 minutes or until liquid is absorbed.

Stir in parsley.

turns out a little bland, add back in 25% of original
amount (1 tsp went to 1/2 tsp; decide if it should be 3/4
tsp for 1-cup-barley recipe).

Leeks are difficult to clean if you try to clean them
before chopping them. I like to slice off the root, then halve or quarter the leek
lengthwise; chop into 1/8" or 1/4" slices. Rinse slices
thoroughly in colander; drain well; measure.

I'm sending along some comfort food as well. Sunday soup!! This is one of my favorite recipes and I just made a batch for lunches this week. It smells so good while cooking it and tastes even better.

Chicken Mulligatawny
Makes 6 servings, about 1 1/2 cups each

Ingredients

1 tablespoon canola oil
1 large yellow onion, diced
2 stalks celery, diced
3 cloves garlic, minced
2 Granny Smith apples, peeled and diced
1 ½ teaspoons hot Madras curry powder (see Tip)
½ teaspoon ground cumin
½ teaspoon ground coriander
½ teaspoon ground ginger
6 cups reduced-sodium chicken broth
½ cup white basmati rice
12 ounces chicken breast tenders, cut into bite-size pieces
1 cup lite coconut milk
1 tablespoon lemon juice
¼ teaspoon salt
¼ teaspoon freshly ground pepper
3 tablespoons toasted sliced almonds (see Tip), optional





Chicken Mulligatawny
Instructions

1. Heat oil in a Dutch oven over medium-high heat. Add onion, celery and garlic; cook, stirring often, until softened, about 5 minutes. Add apples, curry powder, cumin, coriander and ginger and cook, stirring often, until the apples begin to soften, about 2 minutes. Add broth and rice; bring to a boil. Reduce heat to a simmer and cook, uncovered, for 12 minutes.
2. Add chicken, return to a simmer and cook until the chicken is cooked through and the rice is tender, 8 to 10 minutes more. Stir in coconut milk and return to a simmer. Remove from the heat; stir in lemon juice, salt and pepper. Garnish with almonds (if using).

The love and support on this thread and in all the messages I've received is overwhelming. I've done a pretty good job of picking up and moving on today. I've been cleaning, riding my bike (on the trainer) baking and cooking. The leftover biscuits will go well with the horseradish cranberry pot roast that's in the oven. Both of the recipes offered here will go onto my menu in the near future, thank you.

Tomorrow is another day, I go back to work which will be a great distraction and I now have one of my ski passes so I'm contemplating skiing in the next couple of weeks. If that won't cheer me up nothing will! ;) :D

In my experience the first week is always the worst and then it gets much better, so here's to hoping that first week goes by quickly.

Oh, Robyn, I am sorry to hear that things are s*cky for you right now. You are always such a bright spot for me on these bb. It is nice you have such good (real and virtual) friends to give you love and support.
