I'm pretty sure I'm having leftover General Tso's chicken with a broccoli-mushroom stir-fry. But it could be some pasta with the leftover wine-cream sauce from the chicken dish we made a couple of days ago. My husband packs lunches in the morning (I get litter box duty, not a good trade!) so I'm never quite sure until lunch time what I get.

Cheryl (Bijoux)-Of course I will post my chili recipe for you, seeing as how you are responsible for introducing me to the wonderful world of tvp! This isn't a 'real' recipe(just kind of dumped stuff in)
1 can kidney beans, rinsed and drained
1 can great norther beans, rinsed and drained
1 can black beans, rinsed and drained
1 14 oz can diced tomatoes
1 can tomato sauce
1/2 onion, chopped
3 cloves garlic, smushed
1/4 c red or green bell pepper, chopped
1 chopped chipotle chile in adobe sauce
1 tsp pepper
2 tbs chili powder
1 tsp each cumin and coriander
handful of tvp
Saute onions, peppers and garlic until translucent. Add spices and saute a few minutes. Add beans, tomatos and sauce and enough water to make it the consistency you want. Bring to a boil and simmer for half an hour or so. Garnish with green onions and some good cheddar.

I will be having leftover Beef Carbonnade (March 2000) over egg noodles. I made this for dinner last night. A perfect dinner for the cold weather we are having. We actually had snow yesterday afternoon, which is very rare where I live!

I just finished my "clean out the vegetable bin" salad - spinach, red leaf lettuce, carrots, red onion, a mini can of tuna, a little bit of Swiss cheese and - my favorite new salad accessory - roasted soybeans. I tossed it all with Ken's light parmesan dressing. pretty boring, but it was actually quite tasty!

I had a green salad, some leftover tuna, and a clementine orange, all of which I brought from home. As I ate with coworkers at the company cafeteria, I bought some plantains as a side dish, because I'd never had them, and I love bananas. They were actually kind of tasteless; not too impressed.

I am having a soup that I have been making for the last 5 years. About a week ago, I brought out the recipe, bought the stuff for it, misplaced the recipe and had to improvise last night when I made it.
It has chicken, lentils, 3 cups shredded vegetables (green beans, onions, carrots, celery, mushrooms), broth, tomato juice, lemon juice and various seasonings and is pressure cooked for about 25 min.
It didn't come out too bad considering that I misplaced the recipe. This is also one of those recipes that allows you to do it your way. Of course, I will keep obsessing until I find it again! http://www.cookinglight.com/bbs/redface.gif

Today it was a quick stop at my favorite bar-b-que place for a chopped beef sandwich- the BEST chopped beef sandwich I have ever had- and living in Texas I have had a lot!!
Hopefully, if all goes well tonight, tomorrow I will be having leftover Cheesy Vegetable Chowder- mmmmmm- I love a good soup! This is from the November Southern Living Mag.

I had one of my favorite easy lunches: spaghetti squash topped with chunks of grilled chicken and spaghetti sauce. I had one of Paul Newman's sauces today. WOW! Is it spicy. No complaints though!! Today will be either left over baked ziti, or a tossed salad w/feta cheese and grilled chicken, w/a balsamic vinegar dressing. But would really like the left over chocolate cake in the refrig but will refrain, I'm trying to be good http://www.cookinglight.com/bbs/biggrin.gif

My lunch was horrible today. I had to grab something quick & the closest was Burger King, so I had a chicken tender sandwich..........YUCK!!!!

On campus days, I always brownbag my lunch so I can eat while I talk to students. (Along with "what's a vacation," I should have asked "what's a lunch hour?") And I usually pack the same thing every day: cheese (usually sharp provolone) on sprouted grain bread, celery sticks, and fruit. Today I was all out of fresh fruit, so I took applesauce.
Sounds dull, but I never get tired of it. And it doesn't leak, smear, spatter, or sputter while I'm talking to students. http://www.cookinglight.com/bbs/smile.gif

Oh sure - don't ask this on a day when I'm having something worth reporting. Do I really have to confess to the world that I had a bologna sandwich on Brannola bread (the bread redeems the lapse, doesn't it???). And Pirates Booty on the side. And an apple.

I just had leftover Curried Chicken with Couscous (CL March 00, I think, one of the 30 min. recipes). Last time I made it I used regular coconut milk, and it was overpoweringly coconutty. This time I tried it with light coconut milk as required by the recipe, and it's much better. It reheats pretty well too.

I had leftover smoked turkey,pear, walnut & blue cheese salad (Nov 2000). This is the best salad!!! I need to run to the store after work and I think I will get more fixin's since I have plenty of blue cheese, walnuts & pears left. This is a must-try!!!!

then, i am microwaving some Trader Joe's green beans
then, some watermelon
thanks for the trader joe's posts. i live in santa rosa, ca and had always seen the store but never knew what was inside. i just moved to ca from tx, so trader joe's is new to me. love all of the healthy food!!!! and prices are so low

Thanks for asking *today*!: a co-worker cooked KungPao Chicken last night, and brought leftovers for me! Definitely wasn't a CL recipe---but hot, full of veggies and peanuts and deee-licious!
BTW: count me as a Luna Bar lover also, especially Lemon Zest flavor! I always have a stash at work for 'emergencies'!

Mine is a little late but this was my first chance to look at the BB! I had a yucky lunch today. An english muffin with ff cheese melted on top and pretzels. Nothing too exciting.

Finished the last bowl of French Onion Beef Bowl soup today for lunch. This was from Jan. '00. It had soba noodles, garlic croutons, and I used Jarlsberg to melt on top. Yummy. Too bad it's all gone now! Time to cook again!!

I had leftover Wild Mushroom cannelloni from the Make it Ahead supplement. It was delicious!
I really like leftovers for lunch better than a sandwich!

Okay, we always play the "What's for dinner tonight" or "What did you have for dinner last night" game, and that's a lot of fun. But what about lunch? What are you planning to have, or what did you have? And I hope nobody out there is planning on skipping lunch! http://www.cookinglight.com/bbs/eek.gif You deserve a break and need that energy to keep going through the afternoon and evening.
I'm having a cheddar-swiss bagel, a banana, yogurt, and some carrots (though spread out over a couple of hours). And a Reese Stick for dessert. Oops, so much for having dessert last; I just had it, before my carrots. http://www.cookinglight.com/bbs/wink.gif

I'll be having leftovers.
Herb-roasted chicken, potatoes, and carrots.
And tonight for dinner I'm finishing the rest of the roasted chicken by making White bean and chicken chili. If it turns out good I'll post the recipe tomorrow. It's so cold here today it'll be nice to have a big pot of chili.

I'm working from home today, so I'm having leftovers -- Bok Choy slaw, curried bulghur pilaf and curry chutney snapper with mango sorbet for dessert. I really love being able to eat at home...but if I'd gone in to work, it would have been CL's artichoke pasta salad with flaked salmon and a piece of zucchini bread.

Hmmmm..... rummaging through the fridge.... looks like a turkey lunchmeat sandwich (on light wheat bread with fat free Miracle Whip), a light yogurt, and a banana. My preference would be the leftover meatloaf, but I am trying to be good!

Leftover Shepherd's Pie. The recipe is from the "Desperation Dinners" cookbook. It is even better the second day. Also a grapefruit (a weird combination, I know -- I am hoping it will help me avoid getting my office mate's cold!)
I am having Italian Pie. It is a lightened recipe from (sorry CL) Shape Magazine. It is so fabulous. Refrigerated pizza crust with spinach and ricotta, red peppers, turkey sausage, pinenuts, parsley, ham, provolone and mozzarella. It is all put into a springform pan. YUM. I'm going to go eat.

Leftover pasta for me today. I had school last night so hubby cooked (no, that is not a typo) and we had some pasta and garlic bread. Well, the bread was gone last night, but there was enough pasta for me to bring for lunch today.

Looks like I'm going to lunch with a friend to a favorite burrito place of ours! I always order a vegetarian burrito with black beans, rice, pico de gallo, onions, lettuce, cheese, low fat sour cream, cilantro...it's huge...maybe I'll eat half and save the other half for later.

By the time I got home from all my errands it was 2:30 and my shredded wheat w/sliced bananas that I had for breakfast was LONG gone. I gathered together the quickest things I could that I could still consider somewhat healthy: Toasted english muffin w/low fat skippy peanut butter, 1% cottage cheese w/crushed pineapple.
Then, I baked the pumpkin struessel bread from Nov 2000 (which by the way is excellent!) and munched on a few pecans - you know the "chop one/eat one" method of cooking http://www.cookinglight.com/bbs/smile.gif
