I saw pumpkin butter, pear butter as well as apple butter. I know CL has recipes using apple butter but...what would you use pumpkin and pear butter for???

I love pumpkin butter and just use it as a spread on my toast usually. The jar I got at Trader Joe's (the best kind I've had) also suggests using it as an ice cream topping...

William Sonoma sells a brand of pumpkin/pecan butter every fall that is wonderful- the name is Muerhead (sp?). The jar comes with several recipes- I have yet to try any of the recipes. I don't know if this recipe comes with the Williams Sonoma Pumpkin/Pecan butter, but there's an awesome recipe for pumpkin bars using the butter. It's a really simple recipe because you use a box of yellow cake mix. So TASTY!!!

I have some pumpkin butter which I got from my mother-in-law, and I've actually just been substituting it for apple butter in recipes. The flavor turns out a bit different, but it has been a great substitution in every recipe I've tried.
But now that I've seen the idea for stirring it into oatmeal, I'll have to try that! It's definitely getting to be oatmeal weather!

Pumpkin butter...it sounds wonderful, especially this time of year. But, I must admit to never seeing it in the stores. We don't have a Trader Joe's or other more exotic stores where I live. Can you make your own??? Does anyone have a recipe?

Pumpkin Butter
1Can solid-pack pumpkin -- (16 ounce)
2/3 Cup firmly packed brown sugar
1/4 Cup honey
1Teaspoon lemon juice
1/4 Teaspoon ground cinnamon
1/8 Teaspoon ground cloves
In medium saucepan, combine pumpkin, brown sugar, honey, lemon juice,
cinnamon, and cloves. Bring to a boil over medium-high heat, stirring
frequently. Reduce heat; simmer 20 minutes, or until thickened, stirring
occasionally.Ladle mixture into clean jars or freezer containers. Cover with lids. Store
in refrigerator several weeks or freeze for several months.
Yield: 2 cups.
Pumpkin Butter(Culinary Cafe)
Yields: 1 3/4 cups
1 15 oz can solid pack pumpkin(not pumpkin pie filling)
1/2 cup apple cider or apple juice
1/2 cup sugar
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground cloves
pinch of salt
Place ingredients in a saucepan and stir together. Bring to a boil; lower heat to a simmer. Cook , stirring 15 minutes or until butter has become dark and thick.
Spicy pumpkin butter
1/4 c Dark brown sugar, packed
2 tb Sugar
1/4 c Water
1/2 ts Allspice
1/4 ts Ginger
1/4 ts Cloves
1/4 ts Nutmeg
1/2 ts Cinnamon
1 1/2 c Pumpkin
Combine the two sugars, water, allspice, ginger, cloves, nutmeg and cinnamon in a 4-cup glass measure. MW on HIGH 3 minutes; stir. Add pumpkin and MW on HIGH 5 minutes. Let cool and refrigerate. Keeps several weeks in refrigerator or can be frozen. YIELD: 2 cups NOTE: Use this as you would apple butter or TRY USING THIS ADDED TO WHIPPED CREAM TO GARNISH PUMPKIN PIE

I like pumkin butter in hot oatmeal with a spoonful of brown sugar and a little maple syrup. I eat it for dinner in the fall, can't seem to make myself eat pumpkin butter any other time of year, eventhough it's delicious.

Vanessa, here is the recipe for the muffins-
Pumpkin Butter Muffins
1 1/4 cup flour
1/4 cup sugar
1 Tbs. baking powder
1/4 tsp. salt
2 cups bran cereal
1 1/4 cup milk
1 egg
1/2 cup pumpkin butter
Mix flour, sugar, baking powder and salt. In seperate bowl combine cereal and milk and let stand for approx. 5 minutes. Add egg and pumpkin butter to cereal. Add flour mix to cereal till combined. Pour into greased muffin tin. Bake at 400* for 20 minutes.
This recipe is from the Muirhead Pecan Pumpkin Butter jar, sold at Williams Sonoma. I imagine they would be good no matter what brand of pumpkin butter you used.

I would just like to say that the pumpkin butter I made not even 2 weeks ago is almost gone! I've been spreading it on my bagels, on apple wedges, and okay, I had a couple spoonfuls out of the jar...this stuff is so wonderful, I'm definitely making more!

I must have missed this the first time around... thanks for bumping it up again. I had no idea it would be so easy to make my own pumpkin butter!! I'm trying it this weekend. My husband will be thrilled... as will I.

I'm bumping this up again to let others know how great the pumpkin butter is! I had never had pumpkin butter, but was curious after reading this post. I made some and it was soooo easy and tasted GREAT!!! It would definately make a great gift! Thanks again to those who started this post and posted recipes! You've give me a new fall favorite!

I just made the spicy pumpkin butter today--chose that one because it had microwave directions. It is SO EASY and really good. I was tempted to skimp on the spices cause I don't like "spicy" pumpkin pie that well, but am glad I didn't cause, as a butter--especially if you're going to use it on toast--you need a little pep to it.

I made the spicy pumpking butter 2 weeks ago with great success, and apparently I even read the recipe wrong! I don't even have any dark brown sugar on hand, so I must have used light brown by mistake. Well, I raved about it on the board twice, so I guess to answer your question, it shouldn't matter. My guess is that the dark brown would just intensify the flavor a bit, but I don't think it needed it. http://www.cookinglight.com/bbs/smile.gif

Vanessa, I made the first recipe you posted for pumpkin butter; it was great! And then I used it in the pumpkin butter muffins from ML. I like the bran in there. Thanks to both of you!!
On a related note, does anyone have a recipe for apricot butter? I saw a recipe that used it as an ingredient, but now I can't even remember where that was. Oh well, some day it will show up.
