Okay, I don't actually have a recipe for fish tacos, but a local taqueria here makes 'em with charcoal grilled mahimahi and they are to die for.

I don't have a recipe, either, but one of our favorite Mexican restaurants does a fantastic soft fish taco with grilled halibut & their cabbage salad. I'm guessing they brush the halibut with some olive oil and shake on paprika, then grill it. The cabbage salad is a very simple mixture of shredded green cabbage, shredded carrots, olive oil, salt, pepper, and maybe a squeeze of lime. Simple, but fabulous.

I know, they are great! I just found a couple recipes under an ichef.com search for fish tacos. I used to live in San Diego and ate them at Rubios in Mission Bay quite often. I just had a craving for them so I thought I'd see what the board could come up with. :-) It would be something a little different on the grill too.

Thanks, mandarin2j. The tacos I've had are served with a cabbage salad and a sauce of mayo & yogurt or just mayo and lime juice & made with red snapper. I'll give the halibut a try.

Here's my fish taco recipe: I have used cod, snapper, roughy, halibut, tuna! These are really great. I think I originally modified this recipe from an old Sunset Mag.

Fish Tacos

Amount Measure Ingredient -- Preparation Method

1 1/2 pounds cod fillets
1 teaspoon chili powder
salt and pepper
4 cups shredded cabbage
1/4 cup lime juice
1 tablespoon sugar
1 teaspoon chili powder
1 teaspoon cumin
1 tablespoon cilantro -- chopped
8 corn tortillas


Yogurt Sauce:
1 cup plain nonfat yogurt
1 tsp hot pepper sauce
1 clove garlic -- crushed
salt and pepper -- to taste

Steam or bake the fish with chili powder, salt and pepper.
Mix lime juice, sugar, chilipowder and cumin, toss into cabbage. Mix together yogurt, hot pepper sauce, and garlic, salt and pepper for yogurt sauce. Warm corn tortillas, fill with fish, top with cabbage slaw, yogurt dressing, and salsa and eat!

I have a friend who dated a guy who worked at Rubio's for a while a few years ago. He scribbled down how they do their fish tacos for her, and she gave it to me. Don't know how accurate this is, but here is what I got from her:

Rubios Fish Tacos

11/2 lbs. Cod or Pollack fillets

Beer batter:
1 c. flour
1 c. beer
garlic powder

White sauce:
1/2 cup mayo
1/2 c. plain yogurt

Salsa topping:
1 clove garlic
6 ripe tomatoes, diced, peeled
1/2 onion, minced
2 Tblsp cilantro, chopped
2 jalapeno chilies, chopped
1/2 tsp. salt
1/4 tsp. pepper
1 head of cabbage, shredded

Other:
shredded jack or cheddar cheese,
4 limes, cut in wedges,
12 corn tortillas
oil for deep frying

Directions:
Mix flour with beer and garlic. Wash fish by dipping in cold, lightly salted water with lemon juice added. Completely dry, dip into batter. Heat oil in a deep skillet or deep fat fryer at 375. Top with white sauce, and cabbage salsa. Serve with lime wedges.

Oh yum! Fish tacos are so excellent. Most of our Western New York friends believe the words, 'fish' and 'taco' should stay as far away from each other as possible...we tried them in San Diego (of course) and now we are Pavlovian at their mere mention.

Our cheezy imitation is out of BHG red plaid cookbook, which involves brushing a cumin butter onto cod or orange roughy and baking. Nothing compares to a fried-batter fat-filled fish taco, though!

I grew up in San Diego and when I moved to Fresno I always had to go to Rubio's when I went back. I introduced my Armenian family to fish tacos there, and despite the initial "ugh, fish tacos", they are all now converts. Rubios just opened a store here in Fresno two months ago and the first week I was there at least twice. My sister in law is now converting all her friends. Now if we could just get San Felipe type weather here!!

browneye; I made your fish taco recipe for dinner last night using tilapia. YUM! The slaw was maybe a tad too sweet, but that's just a matter of how sour your paritcular limes might be.

Amy, Glad you liked it. I probably don't put that much sugar in the slaw, come to think of it. Sometimes I add the jalapenos and stuff too if I want it spicy.
I made some Wednesday night too with Ling Cod. They were very good. I also "up" the hot sauce in the white yogurt sauce sometimes if I feel like more spicy food.
