I can't even remember everything I've made since I was last able to get on the BB. Well, I'm glad it's back up, and here's what I recall:
Spicy Vegetarian Black Bean Soup -This was from CL Complete. After all the talk on the BB about dried beans being so much more flavorful than canned, I decided to give it a try. I started with black beans, cooked a 1 # bag, and froze them. I defrosted half of them, and made this recipe(I made a half recipe). It was quite spicy so if you don't like things hot, you may not like this, or you may want to cut back on the Chipotle chiles. It had a nice flavor, though with just a subtle hint of sweet. I would make it again.
Curried Noodles with Scallops -This was quite tasty, but also had a little "bite" to it. I used part hot curry(Penzey's). It was good with mango chutney on top(a dollop). Maybe a few crushed peanuts would be nice, too!
Stir Fry Broccoli with Oyster Sauce -This was very quick and tasty for a change instead of plain steamed broccoli all the time.
Summer Garden Tart -I believe this was from last summer sometime(??). I love this. I used skim milk instead of 1% because that is what I had, and it worked fine. I was afraid it would be too runny/soggy with all that milk, but it worked fine.
Roasted Red Pepper Sauce -Red peppers were on sale here a while back. I bought a bunch, roasted some to freeze, and also made this from 5 Star CL cookbook. It was YUMMY! I grilled some veggies, made homemade fettuccine, and served it with a litlle fresh parmesan, and my homemade pletzel bread. YUMMY!!
Cucumber Salad with Peanuts -I liked this, and I really did not think it was that labor intensive. I guess it just took more time than effort(waiting for the liquid to reduce, waiting for the cucumbers to drain etc...), But I liked it well enough to repeat.
Macedonian Salad -THANKS EMILYCAT!! I really liked this salad. This was posted by emilycat on another thread. And I think it was even better the next day. I had leftovers for lunches stuffed in pita bread with a little hummus.
Valchemist's Granola Blondies -These were posted by Valchemist from Eating Well. I used Health Valley Low Fat Date granola and dried cherries instead of cranberries. These were really good! Even better than the Chocolate cherry bars(I made these a while ago, and reviewed them on another thread). The blondies were soft, chewy, and very "homey"-sort of like an oatmeal cookie. They were quite sweet though.
Sea Bass with Tomato Vinaigrette over Couscous -June '01 This was quick and easy to prepare. It was tasty. I think the tomato vinaigrette was the best part. Next time I might try it over a different grain. I'm not a big couscous fan.
