View Full Version : Fresh Mozzarella

I made my first trip to an Amish farmer's market last week and in a frenzy of buying picked up some fresh mozzarella. Now what do I do? It's very bland on its own; I didn't even like it. It needs something to flavor it.

Anybody have suggestions for recipes, marinades, something? Help!

A great fresh salad: Make a bed of red lettuce and layer the top with some fresh mozzarella, and tomates: then sprinkle it with some salt and fresh ground pepper to taste. Make a dressing with olive oil and balsamic vinegar, and pour that over the top, it is really a wonderful light salad.

Fresh mozzerella is very good with roasted peppers, tomatoes and basil. I usually layer them on a plate, then sprinkle some olive oil and balsamic vinegar on top. I'm sure someone will have a recipe for a good tomato / mozzerella salad. I have been dying for some fresh mozzerella cheese. My supermarket just started to carry it!

There was a good recipe for tomato/mozzarella/basil couscous a few months ago when they had that article about couscous.

That's what I use on my pizzas. I find the regular stuff too salty now. It does not melt like regular cheese, but with fresh basil and thinly sliced tomatos on a crust brushed with olive oil, garlic and salt and pepper--delicious!

Kind of on topic - can you buy SMOKED mozzarella? Make it? That is awesome on pizzas (and would be on many other things also).

You could use it to make Rigatoni Caprese - a pasta dish with tomato, basil and fresh mozzeralla - a wonderful light summer meal. You can find it by using the search feature on the main part of the CL website. I just recommended this recipe in another thread - I'll have to make it soon, I'm obviously thinking a lot about it.

Thanks for the great ideas! I can't believe pizza didn't even occur to me! I think I'll also try the Rigatoni Caprese; I have some wonderful fresh tomatoes I'm dying to use.

Buffalo mozzarella, roasted red pepper, fresh basil and a splash of balsamic vinegar on a sun-dried tomato hard roll. Yuuuuuuuummmmmmmmm.

There is such a thing as smoked mozzarella, and you can probably find it in a good Italian deli. I don't think you can make it at home though..

OOOOOOO - smoked mozz is my favorite!! Ten years ago I wouldn't even eat cheese; now I love it, although I still can't eat cheese all by itself. EXCEPT smoked mozzarella, that is. This cheese is really good grated in salad. http://www.cookinglight.com/bbs/smile.gif

I wish I could find fresh mozzarella around here - Caprese (sp?) Salad is yummy! The Tomato-Basil Couscous salad was really good too - I definitely would recommend that one.
