I know that a lot of you already posted reviews of this recipe, but we finally tried it last night, and I couldn't contain my enthusiasm- so please pardon the redundancy of this topic...

The flavors were fantastic! Perfect for a summer meal. We prepared the tomatoes and spinach ahead of time, and it was easy to assemble (although it does take some time). We had some great soft bread that soaked up all the wonderful flavors. It is messy- all the good stuff wants to squish out, but that didn't bother us one bit. I used grape tomatoes, as some other BB'ers did, and used some Havarti cheese that we had on hand instead of the brie. Also used baby spinach and shredded a rotisserie chicken.

I served it with a recipe of my mother's. She steams fresh green beans and mixes them with a great sauce. Some of you might like it, too:

She uses non-fat plain yogurt, freshly grated parmesan cheese, and Salad Supreme spice mix (I know, it's not very Foodie of me...) The measurements are to your taste. Coat the green beans with the sauce and chill. We served with a garnish of lemons and dill. YUM! Very summery and light.
