This salad makes alot. It was very filling,very good for you but the dressing was too boring,too simple. I much prefered Ken's steak house fat free raspberry pecan dressing over this. I am so surprised at being able to find yellow tomatoes in my town. Instead of the cannellini beans i might have enjoyed chick peas instead.

misstapioca we must have planned the same menu! It's been a week or so since I made this. I too was pleased to find yellow tomatoes at the farmer's market. Yum! I don't recall the dressing being bland but it did seem to have a lot of beans in it and not enough spinach. I normally don't measure that carefully and put in as much greens as I desire for my balance but I was trying to save some spinach for another use. I enjoyed the salad and agree that it was filling.

I actually liked this salad. It was very mellow and rather filling for just salad. We had it 4th of July along with the Spring Tortellini Salad from April 01'. They were both very good.

I had leftover white beans in the refrigerator, so I made this salad last night. The dressing needed some help so I doubled the rosemary and vinegar. With the dressing additions, I thought this was very good. Big portions, easy to do and tasty.
