Very simple and Easy. My apricots were a bit too ripe but it did not matter in this recipe. I used Braeburn apples which paired very well with the apricots. The topping was wonderful with the almonds. I took this to work and i got big thumbs up from some folks who have never even eaten a fresh apricot before. this would be good with some vanilla ice cream.
