View Full Version : Beach Meal for Picky Eater??

I require assistance, please! I need some ideas to take for a beach dinner for two - i.e. food that doesn't need to be heated prior to serving. My dining buddy is a very picky eater - won't eat feta cheese, chunky anything, foods too out of the ordinary, etc. Yet, he doesn't absolutely require a meat and potatoes meal, either.

I thought of perhaps some creative sandwiches, but sandwiches seem so "every day".

Any suggestions? Thanks a ton!

I had an excellent meal that I ate on a sailboat on Sunday. We didn't have anywhere to heat anything up so it was room temperature only.

The host made a wonderful potato salad. The potato salad didn't have mayo. This guy is not what I would call comfortable in the kitchen, but it was excellent. The recipe came from the Barefoot Contessa cookbook. Maybe someone has the recipe. I helped in the kitchen chopping vegetables so I don't exactly know the amounts.

Boil mix of red and fingerling potatoes. Chop in rough chunks. Add red onion, dill, olives, cherry tomatoes, parsley, salt, pepper, olive oil, and lemon juice.

We also had some pasta salad that one guest brought. We had some salsa and chips, cheese and apples.

Overall, very good.

You could dress a sandwich up by using more interesting bread - focaccia or pita for example. Maybe even making wraps instead. Checkout the salads in the July issue - many of those would work well, I'd think.
