View Full Version : Favorite Quick and Easy CL Desserts

I would like to hand out samples of low fat desserts to potential clients. Would anyone be willing to share quick and easy dessert recipes from Cooking Light? I'm not picky as to what kind of recipe. It just needs to travel well. Something like muffins, cookies, bars, etc. Thanks so much and boy am I glad this board is back up!!!:p

I really like the Spicy Oatmeal Crisps. They taste quite a bit like cookies my grandmother used to make, but without all the butter! I like them for snacks but they would be a great dessert with a scoop of vanilla frozen yogurt.

We loved the Lemon Swirl Cheesecake made with the lemon curd, and the Texas SHeet Cake is good. I was not fond of the Easy Caramel Brownies made with the chocolate cake mix. They just seemed too sweet for me, but other folks raved about them.

Triple Fruit Scones are fantastic, easy and would travel very well, and I LOVED the Puffed Up Chocolate Chip Cookies (but a lot of people didn't). I think it's important for that recipe that the recipe be followed TO THE LETTER, which makes a difference as to whether they come out well or not, but when they're done right, they're awesome (chewy choc. chip cookies, not hard crispy/crunchy ones). I guess it's personal preference too.

The Easy Lemon Squares are great, and there are several other cookie recipes I could come up with. Let me know if any of those interest you.

The April 2000 issue has some outstanding pound cake recipes- my favorite is the Brown Sugar Pound Cake; the November 2000 CL has several excellent biscotti recipes- my favorites are Cranberry-chocolate chip and Toffee Both cake and biscotti travel very well.

I also recommend the Easy Lemon Squares mentioned by Grace.

Oh yes, Julie, I forgot about BISCOTTI!! Perfect idea - SO fast and easy, and the pound cakes are awesome too. Aren't we just a bunch of geniuses here?! :D

I recently made the hot fudge cake from the reader recipes section. It was so good right out of the oven topped with vanilla ice cream. The author of the recipe is right, it takes ingredients that you always have on hand.
