These are the salad/quesadilla combos that were in the June issue...

We tried the flank steak/blue cheese one last night and we gave them a rating of 8.5 out of 10! There were a lot of steps in the construction of the quesadillas- grill first, slice, heat the quesadilla- but they were very yummy! The flank steak we got happened to be a particularly tender one (flank steaks can be very hit-or-miss as far as tenderness goes, we have found) and we agreed that this contributed our high rating. If the steak hadn't been so tender, the quesadillas wouldn't have been as enjoyable to eat. Key: slice thinly!

The blue cheese was a really wonderful, tangy flavor contrast to the flavor of the meat. We also added sauteed bell peppers and onions, which I highly recommend, because they added a sweetness to the whole thing that really rounded out the flavors. The salad dressing was complimentary to the whole dish- I really like the Lemon-Dijon Vinagrette that was in this article- have used it many times.

So, have any of you tried these salads? Would love to hear some of your thoughts! :)

I've made the Cheddar-Jalapeno Quesadilla Salad With Cilantro Lime Vinaigrette several times and both DH and I love it. It's a great summertime meal.

Last weekend I made the quesadillas (without the salad) as an appetizer for a small gathering. I just cut them into smaller pieces and served them with a tomatillo and avocado salsa. They were a big hit.

I've also used the Dijon-Lemon Vinaigrette on other salads and drizzled it over vegetables.

All of the components of the recipes from this article seem to lend themselves to a number of variations.

Thanks for the reviews. These don't sound familiar to me at all . So I guess I'll be pulling out my June issue again.

another thumbs up for the cheddar-jalepeno... etc. this was GREAT! but much better on the first day. i may make this quicker next time by not even bothering with the dressing. maybe just a squeeze of lime and a bit o' cilantro. the dressing was an added step that i didn't really taste. the salsa and sour cream serve as a "dressing", i think.
