Hi! I'm looking for a lower calorie cornbread, if there is such a thing. HELP!

I have made several lower fat versions of cornbread and I have come to the conclusion to cut down fat somewhere else. The finished product turns out so dry it is not edible. Just my humble opinion.

I think the recipe I have settled with is one of Emeril's. It is very good, but, kicked up a notch. I'll post it if you are interested.
