I'm looking for a low-fat Cornbread recipe! Is there such a thing as corbread that isn't 40-50% fat? :confused:

Here's a recipe that works well and is very low in fat...
Fatfree Cornbread
1 cup cornmeal
1 cup flour
4 tsp. baking powder
1/4 cup sugar
1 tsp. salt
1 T egg replacement
1 cup fatfree soy milk
almost 1/2 cup applesauce, unsweetened
Mix all ingredients just until evenly blended. Place in loaf pan in 450º oven (no need to preheat). Bake for 20-25 min. Bread is done when tester inserted in middle of bread comes out fairly clean.
Can be used to make cornmeal muffins as well!

1 cup cornmeal
1 cup flour
3 T sugar
2 t baking powder
3/4 t salt
1 cup nonfat plain yogurt
1/4 cup skim milk
2 eggs
3 T oil
1/2 cup whole kernel corn
Preheat oven to 425 F. Spray a 9 x 9 pan. Combine cornmeal through salt in one bowl, and the remaining ingredients in another. Stir the wet and dry ingredients together until just moistened. Pour batter into pan; bake 25 min, until golden on top. Cool in pan for 10 min.

Hi Dave,
I have tried to make my own cornbread, and I have discovered that my favorite is a good ole Jiffy mix. If you use skim milk and egg white, one muffin contains only five grams of fat.
I'm going to try some of the tasty looking recipes that the other members suggested. However, if you're ever in a pinch, you may like Jiffy. I have added extra corn kernels to it and that made it a little special.

Here's a good recipe from Healthy Homestyle Cooking. I've made this for myself and a client--no complaints. If you decide to make these into muffins, they stick terribley (sp?) to the muffin liner even if you spray the liners with no-stick spray.
Buttermilk Cornbread
1 cup all-purpose flour
1 cup cornmeal
1/4 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
2 each egg whites, lightly beaten
1 cup buttermilk, nonfat
1/3 cup applesauce, unsweetened
Preheat oven to 400 degrees. Lightly spray an 8x8 pan and set aside.
In a large bowl, stir together flour, cornmeal, sugar, baking powder and salt. Make a well in center.
In a small bowl, stir together egg whites, buttermilk and applesauce. Add buttermilk mixture to flour mixture and stir just until moistened.
Pour batter into pan. Bake about 25 min.

Cornbread, as made my family at least, has very little or no fat in it (no flour either). My mother would only add the excess oil from the cast iron skillet into the batter - only about a tablespoon of oil at the most.
If you want to make authentic southern cornbread, see if you can find some White Lily self-rising cornmeal mix. I believe some catalogs like King Arthur's and Williams Sonoma carry it. Follow the recipe on the back of the bag, reducing the oil to about a tablespoon.
