I Know some of these have been discussed, but our dinner last night was such a hit, I just had to post the menu. We had Thai Grilled Chicken-I made the recipe just as it was written, including the cilanto, Thai Coconut Noodle-also as written, and Spicy Cucumber Salad with Peanuts. Each dish complimented the others. The meal got very high ratings with all.

Where did you find the recipe for the Thai coconut noodle? Am I going crazy? I can't find it with the rest of the Thai cooking section in June....

Hi mightyh!
I saw your question and I think I can help you out - I'm guessing that the Thai Coconut Noodle recipe that Terrytx is talking about is from the Sept. 98 issue. You can find it on the website in the recipe finder. If, for some reason, it doesn't come up for you, let me know and I'll post it.
And...I second Terry's "thumbs-up" -- I've made the coconut noodles and they are REALLY good!!

Thai Coconut Noodles**
Recipe By :Cooking Light-9/98

Amount Measure Ingredient -- Preparation Method

2 cups snow peas, trimmed -- (about 8oz)
1 (8oz) pkg rice sticks
1 teaspoon dark sesame oil
1/2 cup chopped green onions
1 1/2 tablespoons minced peeled fresh ginger
2 cloves garlic -- minced
1/2 cup light coconut milk (such as Hokan)
1/2 cup water
1/4 cup tomato paste
1 1/2 teaspoons curry powder
1/2 teaspoon salt
dash ground red pepper
1/4 cup minced fresh cilantro
1. Cook snow peas and rice sticks in boiling water 3 mins. Drain well.
2. Heat oil in a large nonstick skillet over med. heat. Add onions, ginger, and garlic, and saute 2 mins. Stir in milk and next 5 ingreds.; bring to a boil. Cover , reduce heat, and simmer 5 min., stirring grequently. Combine snow peas, rice sticks and green onion mixture in a large bowl, and sprinkle with cilantro.
276 cal, 3.6g fat, 8.4g pro, 56g carb, 2.9g fiber, 0mg chao, 3.2g iron, 338mg sod.

I really like the sound of this- I love anything with coconut milk, my cilantro is going crazy and I picked up a pound of snow peas at the farmer's market over the weekend. But, what are rice sticks? I was thinking of just using whole wheat fettucine. Would it work, do you suppose?

Rice sticks are the clear noodles that take about 3 minutes to cook..Yes use the fettuccini.

I am so LOL!! You will not believe what I am eating for lunch at this very moment! Yes, rice sticks. :D Except the package called them cellophane noodles. Actually, I think they are made out of beans, rather than rice. Same notion, anywho.
Anyway, that was the last of them ,so I will use the fettucine.
