Do you eat the top and bottom layer (crust/mold - whatever you call it) that comes with brie cheese? Or do you slice it off? I tried to bake a wedge and wrapped it in a crescent roll and it lost its shape. So then I wasn't sure if I was suppose to leave that layer on there.

I usually eat the whole thing! I think it is a personal preference though.

I eat the whole thing, but I have a friend who doesn't. You can't bake it without it on - it will lose it's shape as you found out. Some bries are better than others. On some, the rhind is bitter & some, you can't even taste it.

I always keep the rind on when I bake it. If I am going to use it on sandwiches (or cold) , I will usually scoop out the middle and not use the rind. It is edible, just a personal preference.

Well live and learn. Thanks for the help. I think I'll try to bake another one this weekend with the top on just to see how it turns out. I tasted the rind and was not impressed with the flavor so I didn't think it was edible. I must have gotten a bitter brie has Leanne said some are bitter and some are not.
