I took a cooking class at a local place two weeks ago and got a fabulous salsa recipe.
2 cups cooked black beans, rinsed and drained
1 large tomato, seeded and chopped
1/4 cup chopped scallions
1/2 cup red bell pepper, diced
1 avocado, diced
1/3 cup Rasberry Teriyaki Sauce
1/4 cup canola oil
Grated rind of one lime
1 1/2 T lime juice
1/8 tsp. black pepper
1/8 tsp. cayenne papper
salt to taste
This was a great salsa. The place that gave the classes is Tait's Farm. I would imagine you could use regular teriyaki sauce mixed with a bit of fruit juice, but their Rasberry Teriyaki sauce is awesome. They are located on line at http://www.taitfarmfoods.com. They have great products. This salsa still tasted good after a few days, too.
