View Full Version : anyone tried Pork Tenderloin with Rosemary and Garlic from CL Complete?

I just received my CL Complete (YEA! :) ) and came across this recipe. I love pork tenderloin, and need to find uses for fresh rosemary from my new herb garden....I couldn't find any reviews in my search of the site...

Also, if you've tried it, or even if you haven't, what side dishes do you think would be nice to accompany?

I've tried it and it's really yummy. I can also offer you a twist on that recipe that is especially great if your grill has a rotisserie... mix together about a tablespoon of butter, 2 tablespoons of rosemary, and 2 tablespoons of garlic. make several 1-inch-long (and about 1/4-inch deep) slashes across the tenderloin. press the butter mixture into the slashes and all over the tenderloin. then take about 8 slices of prosciutto and completely wrap the tenderloing, using kitchen twine to make it stay in place. If you have a rotisserie, just plot it on and let is cook on the grill for about 40 min. You can also bake it in the oven at 350 for about 40 min. The prosciutto keeps all the juices inside the pork, so that you end up with an unbelievably tender and tasty roast.

For a side to either of these dishes, how about a potato gratin and some green beans with lemon and rosemary.

Thanks for your review, Tracey! I did make this Friday night and it was very well received. The flavor was great and it was very easy to make. However, since I am used to grilling or open roasting my tenderloin ( this recipe wraps them in foil to roast) I was kind of missing the savory crust that usually results. But the meat was definitely more juicy and tender than with the other techniques.

Also had to adjust cooking time...added about 15 minutes! (and they say it cooks in 20 minutes...)

I served it with garlicky green beans, garden risotto, spinach salad, and blueberry poundcake for desert. We used the leftover pork in a stir fry the next day and enjoyed the flavor again!

Thanks for the review on this recipe- It is one I haven't tried yet but it would be perfect to use up some of my very large rosemary plant on!
